spoiled mung bean sprouts smell like cinnamon?

So I found the lost baggie of mung bean sprouts this morning. Probably
been in there for a couple weeks after a week or so of growing on the
counter.

These were dried beans that I bought- rinsed and sprouted. So I
*know* there is nothing added to them. Rinsed once or twice a day
for a week. Tasted just like sprouts a week or 10 days ago.

Though the color was off, and there was visible mold, something made
me smell the package before tossing it. It smelled great! Not
an overbearing cinnamon smell, but strong and pleasant.

That ever happen to anyone else? Should I be cultivating the
'cinnamon bacteria'?

I'm probably throwing out a delicacy. . . but I am a coward this
morning.

I have found they have a musty/curry smell not so much cinnamon even when
they are reasonably fresh. I have always put it down to the breaking down
of the husk as the are sprouting.
