With a pesto-romano cream sauce, motz, provolone, and
anchovy-stuffed olives. Like most of these holidays, I didn't know
about this one until 3-4 hours ago when I read my "restaurant
email".

Aside from the olives it looks good. Is the pepperoni shortage over?

Man, when I was a kid, *green* olives were a choice for pizza toppings.
Ripe olives on pizza are great, especially Greek/Turkish ones. Green
olives on pizza is wrong.

I never cared much for canned black olives. They are barely acceptable
on pizza, provided they are used sparingly.

They are almost tasteless. I haven't eaten them in years. Heck, I got jarred
Kalamata olives at Dollar Tree. Why do they even make those bland canned
things? Oh yeah, for 15 YO potheads who eat them out of the can.

On pizza sliced pimento stuffed green olives matter... and anchovy...
without anchovy pizza is worthless.
Tonight's dinner was Italian saw-seege with lots of homegrown green
peppers, and homemade tomato sauce... exceptionally good and plenty
for tomorrow... may add pasta. And still got a load of green peppers
in the fridge, saved the big ones, may stuff them.

There is a butcher shop about three miles down the road where I can get
small pitted black olives. They are great for Greek salads and would
probably be good on pizza.

Then there's the content as well. Several chapters later there is an inside joke
recalling the hypothetical chewed up anchovies:

****************
At the pizzaria, Ian paid, and this time no one questioned anything but Winter's
choice of toppings. Eric and Chloe split a double sausage, but Winter ordered
extra sauce and cheese with anchovies. “I've never had anchovies on a pizza,”
said Ian.
“You'll love it.”
“Mama bird?” asked Ian.
“No, Ian, you're going to have to eat like a big boy.”
Chloe asked what they were laughing about, and Winter replied, “You don't
want to know, just believe me. You don't wanna know.”
****************

Now you tell me that isn't funny, in a kind of maybe wish you hadn't read it kind
of way.

Obviously, I can't speak for Bryan, but I don't like hot anchovies, except extremely
sparingly as umami-bombs in other dishes. They overwhelm my taste buds.

I don't like pepperoncini on a Greek salad (either the proper kind without lettuce
or the more common kind with lettuce) for the same reason. If I bite into one,
that's all I can taste for the rest of the meal.

I felt the same way for a long time. Then I realized that canned olives
need more time under the heat to make them more 'pizza place' like. So
I'll put them on a cookie sheet under the broiler and give it long
enough whereby they begin to wrinkle.

Then i'd put them on the pizza to bake. They tasted more like what you'd
expect from a pizza place.

I'm a sucker for black olives on pizza.
