So a nexus of having a urge for sweets and wanting to crack open (at least once!) one of the many second-hand cookbooks I've accumulated but not really explored over the past few years led me to:

Salted Peanut Chews

from _Pillsbury Best Cookies Cookbook_ (1997)

Especially satisfying to a salt, sugar, and peanut junkie like me.

sounds good, but i would instead use peanut butter mixed with
powdered sugar instead of peanut butter chips. i really like
peanuts and peanut butter and most peanut butter chips aren't
going to be that good in comparison (and besides they usually
have palm kernel oil which is gross). oh, i'd not bother
chopping the peanuts either and like to use redskins. :)

I agree, having now tried them.

Peanuts were whole. The smaller bits in the photo are the rice cereal.

the recipe called for chopping them. i'm ok with larger chunks
or whole peanuts. :)

why? you are only heating the topping until warmed enough
to put on top, there's no issue with peanut butter and sugar
burning/scorching if you are just warming it. if you are
worried about burning it use a microwave and only heat using
a few seconds at a time until you get the right temperature
or even a double boiler (which i hardly ever do).

Not sure how that got into the album, other than that perhaps he likes cookies (and bird watching and Mexican pottery) just like Mrs. Beitel does. :-)

if you would like another alternative to peanut butter
chips you could use peanut butter mixed with white
chocolate. this would probably end up in a similar
consistency as peanut butter chips but avoid the palm
kernel oil.

note, i don't have measurements of what to what as
i'd figure most people will do this to taste and
desired texture anyways.

peanut butter and corn syrup isn't going to be a
milkshake consistency. are you using lite corn
syrup or something else?

anyways, no, this doesn't make sense to me.

but i think the point i missed here is that i
would be replacing the corn syrup AND the
flavored chips with peanut butter and powdered
sugar.

so, yes, a mistake on my part and i admit that
not being clearer could have messed up someone
else.

i'm well aware of that and read the labels
if i'm in doubt about a product. i don't use
most flavored chips sold because they're often
not very good and the mouth feel is wrong
(slimy, waxy, gross vs. smooth).

the slimy grossness. cocoa butter is a different
fat than palm kernel oil. white chocolate is just
fine nutritionally, but like all things in moderation
is a good idea for extra calories.

i used to make a lot of various desserts and
chocolates. for flavor and mouth feel there wasn't
anything that was better than actual chocolate
(either white, dark or milk). most of the time i
would not cut with other ingredients other than
cream or liquors (or both). sometime chopped nuts.
peanut butter and powdered sugar is very easy and
good.

Back when I baked peanut butter cookies there were no peanut butter
chips, I added chopped and whole peanuts. I used to prefer those
Spanish peanuts with the brown skin still attached, in fact I still
prefer them, they have a more pronounced peanut flavor.

Way back when I worked for Barton's Bonbonaire after school as a stock
boy the white chocolate was real only I didn't like it... to me eating
white chocolate was like eating Spry... Spry was like Crisco.

when making peanut butter cookies with whole peanuts
including the skins (often called redskins here) it was
usually a good idea to use raw peanuts in the recipe,
like when making peanut brittle the uncooked peanuts
can cook a little during the process and don't get so
overdone or abused. however, we hardly ever make
peanut butter cookies any more here so even when we
do now we just use peanut butter and no chunks of
peanuts or raw peanuts in the mix. :(

this is funny though because not having made any
peanut butter cookies for a long time Mom decided to
make some a few weeks ago. but she skimped on the
peanut butter so they're a wimpy version. i may
have to make some peanut butter frosting to put on
them to make them worth eating or just get out the
jar of peanut butter... that's much easier. :)

you ever have Nutter Butter cookies?

we make a version of them very simple
using just powdered sugar, a good vanilla
and peanut butter (adjust all to taste
and texture you like) as a filling for
graham crackers.

in the middle of summer when you don't
care to turn the oven on these are good.

of course you can make the frosting in
the middle any flavors you like. butter
and some extracts or liquors (you don't
need much) and maybe a small amount of
milk (go very light as it sure doesn't
take much to make a frosting too runny).

and if you want to foray into making
bars there are Nanaimo Bars...

I love peanuts, peanut butter, and peanut butter fudge but I don't care
for peanut butter cookies either. Oh, I'll eat them but if I have my
druthers, I'd druther have a different cookie.
