Fudge-for the Fudge impaired

No cook Fudge

Well, ok I lied just a little. I forgot you need heat to melt the
chocolate chips. It doesn't need to be heated to a certain
temperature, so I think of it as no-cook. I use the microwave to do
the melting. If I have to use a candy thermometer, I am a total
loser. This fudge comes out great every time.

3 cups semi-sweet chocolate chips
1-14 oz. can Eagle Brand Sweetened Condensed Milk
dash of salt
1 1/2 tsp vanilla
1/2 cup chopped nuts

In top of double boiler (or microwave) melt chocolate, stirring
occasionally.

Remove from heat (or microwave) - add milk, salt, vanilla, and nuts.

Stir until smooth.

Spread mixture evenly into waxed-paper lined 8X8" baking pan.

Chill 2 hours or until firm

Turn fudge onto cutting board, peel off paper and cut into squares.
Tightly cover any leftovers.

Another fudge recipe for the microwave is:

Magic Velvet Fudge (Reportedly a match for Van Duyn's)
3 (6 oz.) pks chocolate chips
1 2/3 c. sweetened condensed milk (14 oz.)
2 tsp. vanilla
1/3 c. powdered sugar
pinch of salt
1/2 c. chopped walnuts

In 1 1/2 qt. glass casserole, microwave (high) chips, 2 minutes, rotating 1/4
turn halfway through cooking. Stir until smooth. Blend in milk, vanilla,
powdered sugar and salt. Add nuts, blending well. Pour into a 12x8 inch dish
lined with wax paper. Chill until firm. Makes 1 1/2 pounds.

Homemade Sweetened Condensed Milk

3/4 c. sugar
1/3 c. water
1/4 c. butter
1 c. dry milk crystals

In 2 c. glass measure, add sugar, water and butter. Microwave (high) 1 1/2-2
minutes until mixture boils, stirring every 30 seconds. Combine in blender
with dry milk. Process until smooth. Refrigerate until needed. Makes 1 c.
(Double recipe to substitute for 14-oz can = 1 2/3 cup.)

I've found a super simple fudge recipe that has ingredients I just about
always have on hand. It is called:

Quickie Sugar Fudge

1 lb. box powdered sugar (3 1/2-4 c.)
1/2 c. cocoa
1/4 c. milk
pinch salt
1/4 lb. butter (margarine works just fine)
1 t. vanilla
1/2 c. chopped nuts (optional!)

In 1 qt. glass casserole (or a large measuring cup!), add powdered sugar,
cocoa, milk, salt and butter. Microwave (high) 2 minutes. Stir evenly. Add
vanilla and nuts, blending well. Line a pie plate with wax paper (or grease
the pie plate with the butter wrapper!) Pour fudge into plate; chill until
firm. Makes 1 pound.

This is a "sugary" recipe. It is supposed to be a kids favorite. I made it a
lot when my nieces and nephews visited and it went over well. It's fun to add
miniature marshmallows too!

For the super-impaired, from my friend Doug

IN micro-proof bowl, mix one can of sweetend condensed milk and one 12 oz bag
of semi-sweet chocolate chips.

Nuke, stirring every 90 seconds or so until mixture is hot and smooth

Stir in nuts, coconut, or whatever chunky stuff you like.

Pour into greased 8x8x2 pan. Chill

For a nifty treat, get a bag of mint Andes and nuke them until melted, pour
over your fudge.
