WANTED: Sole w/ banana (Tio Pepe's in Baltimore)

Hi Gang!

I have been searching for a recipe for several years. Hopefully you
folks can help me out. There is a restaurant in Baltimore called Tio
Pepe's that serves the BEST dish I've ever eaten. It is a filet of
sole with a banana sauce (and as my memory serves me it was stuffed
with crab meat).

I've searched and searched and can't find anything like it. I moved
from Baltimore to Florida and really miss going to the restaurant. I
even wrote to the folks at the restaurant requesting the recipe, but
never got a response.

Can anybody help????

Now you are talking about a primo Spanish restaurant. Can;t help you with
dish, but just remembered group chatting about Zarazuela(something like
that spelling). Best I ever had was in Tio Pepe. Also, their walnut cake
was to die for. Oh, for a business trip to Baltimore.

One of my favorite dishes ever. Topped with hollandaise sauce. I honestly do not remember the crabmeat, but it's been years..... My guess would be that the fish/bananas were poached and the hollandaise added at the end, and baked briefly high in oven until top browned.

One would be hard pressed to find sole in the US other than frozen and
then it'd be questionable... sole is found in UK waters, not anywhere
near the US. Anyway I don't think I'd care for any seafood with
banana sauce. So what's a "whine sauce"?

thicker. I chopped some onion in with them too.

Did I do right by rinsing the potatoes? My other computer has a problem
with its power connection and I am on this old one and I don't have the
recipes. Also, (I guess it just isn't my day), I took 4 photos of it which
didn't come out:( Don't ask. I just don't know. I put the wee card in
this 'puter to take them off is it was empty:( I took 2 of it in the pan and
2 of D's plate of fry up.

He enjoyed it anyway so I guess that is all that matters.

I will be making them again soon so pics there WILL BE !!!!

It depends on how many potatoes I have shredded, usually just a couple of
potatoes, I'd say I usually do about an inch deep or so in a 10in skillet,
because he likes his really crispy on the outside. Yes, I always rinse them
in cold water after shredding and then twist in a tea towel to get the
excess water out before frying.

I made some sous vide fried chicken chicken thighs yesterday. My wife said they were great but I thought they were kind of boring. They need more fire. The great thing about sous vide fried chicken is that you can fry them up in super hot oil. I love that! The next time, the chicken thighs will be made with Chicken Alice marinate. They will not be boring!

I can't say if my taste buds are shot or not. My wife can't handle too spicy foods these days. She's pretty much a disgrace in the eyes of all the Koreans in the world.

I used to eat a Chicken Alice's over 20 years ago. I could eat the whole plate of spicy chicken wings. It was something like a dozen pieces. The hard part about Chicken Alice's recipe is that the batter gets very dark when fried. You have to cook it at a lower temperature in order to cook the inside without burning the outside. This tends to make the chicken a little greasy. With sous vide, that's not a problem. Brilliant!

Now my main problem is finding a jar of Park's Kim Chee Sauce. I had a couple of bottles of that wondrous stuff but my daughter may have dumped it. Oh, the humanity!

No problem! I'd say start with 1/2 inch then and see what that works
like. Thinner is faster crisping but needs more tending before it
burns.

I've never thought much of my wife's intestines - it's never been that impressive. But don't tell her I said that. :)

Today I was going to make pancakes for breakfast but after thinking about it, that seemed awfully boring. It's not the way to start the new year. We had miso soup, rice, and poke. That was pretty nice. Today I'm going to make a Spam pie. Perhaps later we can have a Spam hamburger. Oh yeah! :)

I made a sweet Spam pie - it's actually a pecan pie made with a can of Spam added instead of pecans. It was rather disappointing because it tasted like pecan pie. A Spam quiche would have been a lot better but I had to try it at least once.
