Favorite bread machine recipe?

Since I replaced my machine and my old recipes didn't work as well I've
been using this one from food.com:

Awesome Homemade Crusty Bread by Marie

1 lb loaf

1 cup warm water
1 pkg active dry yeast (I use 1 1/2 tsp)
2 Tbs shortening
2 Tbs sugar
1 Tsp salt
2 1/2 C flour

I set machine for French Bread and Dark crust.

Seems like a lot of sugar and shortening but this seems to improve the
crust, at least with the Oster machine I'm currently using.

What's your favorite bread machine recipe, if you use one?

I like all of their books. Any of their recipes I tried always
worked. I now longer have a bread machine but I still use some of the
recipes.

I'm fond of using the ABM as a mixer/kneader on the dough cycle and then
proofing and baking the "old fashioned" way. This is currently my go-to
semi-ABM bread:

Caraway Rye Bread

Ingredients:

2 eggs plus enough 80 degree water to make 1 1/3 cups
1/4 cup oil
1/4 cup honey
3 tablespoons dry milk
2 teaspoons salt
2 cups bread flour
1 cup whole wheat flour
1 cup rye flour
3 tablespoons caraway seeds
2 1/4 teaspoons active dry yeast

Directions:

Put all ingredients in the bread machine in the order given.
Select dough cycle.
At end of dough cycle, put dough into greased pullman loaf pan.
Proof in proofing oven for 30 - 45 minutes.
Bake at 350 degrees for 35 minutes.
Cool for a period on a wire rack.
Remove loaf from pan and cool completely before slicing.

Here's a selection. I am normally mking 2 lbs loaves. You should be
able to cut down to 1 lb ones ok.

Also, I normally use dough mode now and bake it in the oven.

Title: Xxcarol's Cheddar Onion Pepper Bread
Categories: Xxcarol, Breadmaker
Yield: 8 Servings

1 1/4 c Milk
1 tb Butter
1 tb Sugar
1 ts Salt
1/8 ts Shichimi (can use paprika)
1/8 ts Dry mustard powder
3 1/2 c Flour, white breadmakers
3/4 c Grated cheddar cheese
1/4 c Grated red onion
2 ts Yeast
1 ts Black pepper

SkyHigh bread! Add the ingredients listed and set to 'french' if you
have that setting. Otherwise, 'normal' will do.

Shichimi is a very common Japanese spice mix of hot chile powders.
You can use a powdered paprika or a hotter powdered chile for nearly
the same effect.

This one was made to go with a pot of potato soup, of a german base
where the potato melts away into the soup and there are minimal bits
of carrot and cabbage about.

Title: Xxcarol's Breadmachine dinner rolls

Yield: 10 Servings

1/2 c Water
1 tb Softened butter
1 ea Egg
2 1/4 c White flour-bread maker type
2 tb Sugar
1/2 ts Salt
1 1/2 ts Yeast (1 pk)

Place all in the pan in the order listed and select sweet dough cycle.
Grease a cookie sheet. Once the dough cycle is done (about 1 hour 20
mins) divide the dough into 10 pieces and roll into balls. I used
waxed paper on a table with a little flour to make this easier. Put
them on the greased cookie sheet and cover with a towel. Let them
rise 30-40 mins until double.

Pre-heat oven to 375 and bake for 12-15 mins. May brush with butter
before baking if desired.

Oh this is good! It's a 1.5lb loaf set to white bread. It comes out
a brown color as if it was a wheat bread and it's quite sweet like a
dessert bread.

Needs nothing to accompany it, just slice and eat!

2 2/3 c Flour, white or wheat

A high rising bread, this one will take to whole wheat in part or all
of the bread flour. Increase gluten by 1 TB if all whole wheat. You
cvan also use regular white sugar in place of the brown.

This is for a 2 LB loaf, select whole grain is you have it, if not
basic white bread cycle will work.

Made even with all white flour, this will be a darker blend of bread.
It's effect when made with whole wheat flour is a dark and rustic
whole grain goodness.

Ruth's recipe. Can use 3scant TB regular sugar for the brown and add
3 TB gluten for high rise. Can add 1 TB dry milk.

3 tb Honey
3 tb Prepared mustard
4 ts Olive oil
3 c White bread flour
1 c Rye flour
2 ts Gluten powder
1 ts Salt
3/4 ts Dry mustard powder
2 ts Active dry yeast

Ok, sue me! I tweaked this one pretty heavy from a book I have here.
This one makes a lovely high rising darkish loaf with a rather nice
mustardy taste. The original used all white flour and dijon mustard
matched to a coleman's dry mustard.

I didnt have that handy so used a mix of prepared hot asian mustard
matched to a little french's prepared yellow mustard (about 1/3 hot
asian, rest the cooler flavered American favorite). I didnt have
coleman's dry either so used a fairly hot asian blended dry. Optional
addition of a little wasabi powder (can use any horseradish powder)
at about 1/8 ts was used as I wanted a little 'punch'. You could
also add a little crushed mustard seed if you want.

Serving suggestions: with roast beef or a nice pastrami, this is a
killer good bread! Add a layer of good white cheese and possibly
some coleslaw or sourkraut. It really rocks with a cold beer!

Title: Xxcarol's Brie, Pepper, Onion soda bread

2 c Flour, white all purpose
1 ts Salt
1/3 c Butter
1 c Slivered brie (or small bits
1/2 c Fine chopped onion
1 tb Black pepper
2/3 c Milk
1 tb Baking soda

Start with all the dry ingredients and mix them well in a large bowl.
Now add the butter (softened but not melted) and chop that into the
mix as well as you reasonably can. Add the remaining ingredients and
mix to a dough. Using a preheated oven (always preheat when making
bread or fish!) bake at 450 degrees for about 25 minutes.

You can actually use any cheese I can think of for this (if using
cottage cheese, add a bit more flour if it seems to 'wet') and you
may want to vary the spice used to match the cheese type. The onions
are optional.

1 c Water
2/3 c Cooked potatoes (mashed)
1/2 c Milk
1/2 c Shredded cheese (Cheddar)
1 tb Butter
4 c Flour
4 ts Sugar
1 ts Salt
1/2 ts Onion powder
1/2 ts Caraway seed (up to 1 ts)
2 ts Breadmachine yeast

This is for a 2 lb loaf. The original calls for peeling and boiling
potatoes in small pieces for 15 mins then mashing to 3/4 cup and
using the cooled potato water for the other cup but that takes too
long. I used leftover mashed (real) potatoes and water. The Caraway
seeds were also optional and supposed to be crushed but I added them
whole.

I put the mashed potatoes, water and milk together and stirred with a
fork to a fairly smooth blend then added the rest in the order
listed. Turned the machine on in dough mode and went away until it
beeped.

The dough was a little stickier than most and we put some in a loaf
pan (I want some to slice and toast) and the rest into about 9 buns.

1 ts Onion power (up to 2 ts)

A simple bread, this one works very well in dough mode then turned
into sandwich rolls for the week, matching well to ham or salami with
cheese and melted in the microwave a bit at work.

Add all ingredients in the order listed for your machine. Can use
shortening or cooking oil for the butter. Lends well to additional
spices such as 1/4 cup dried parsley. For a nice look, brush lightly
with oil then top with poppy seeds!
