When I bought the corned beef at the butcher yesterday, I asked about
their chicken wings. They were 99c/lb months ago, but now they are
$1.99/lb. I think that's still a fair value, so I bought a bag. All of
the chicken pictured cost me about $4.18. I'm roasting them in butter,
in a moderately hot oven.

Sophia said she prefers the drummies, perhaps because they are easier
for her to hold. That works out just dandy, because I'll separate all
the flats into a smaller pan with buffalo sauce for me at the end of
roast time. I seasoned the drummies, and the ones that she doesn't eat
plus left over bones will make up nicely into a quart bag of chicken
broth for the freezer.

I don't know what I'm making with it, but we'll get there. What's to
eat in your kitchen, today?

This week Kroger has a choice of boneless, skinless chicken breasts or wings
on sale for $1.99 per pound with their downloaded digital coupon. I picked up
a 4½ pound package yesterday and have been toying with different ideas of how
to cook it. I had thought of a chicken pot pie, but I think I've decided on chicken
in the crockpot and cooking the whole package to share with two neighbors. It
will be served over separately cooked white rice and they will be on their own for
a choice of a side vegetable.

Tomorrow a chuck steak with frites and Bruxelles sprouts...

Yesterday for St. Paddy's day I met two old schoolmates, Joan and Chuck, that I had not seen
for **51** years, since HS... we met at the Celtic Knot, which was doing a GRAND business... I had
fish 'n chips, they had corned beef sammies...

We grew up together, so it was fun to catch up and share old memories... they've had a long and
happy marriage and have kids living in the area, so they might move up here eventually from
Western IL to be nearer to them...

Ah, memories... 60 years ago seems just like yesterday...!!!

told us that President Kennedy had been shot... we all started crying...

Brenda Griffith and her husband have made a life in West Africa doing missionary work... and
Brenda's parents who've been married for 70 years were at our HS reunion with them last year...!!!

GM: Andy Louck was always mean to me in PE class, he was so stupid and I HATED him...
Joan: Well, Greg, you'll be happy to know that he screwed up his life and still lives in his mom's basement...

Remember in 1970 when our new young HS Principal called some of the new young female teachers
into his office and chastised them for wearing shorty - short mini - skirts... some of the
male HS students were making "rude" comments...

Greg, remember that Christmas gift exchange in the fifth grade, and you gave me a nice
brooch - I still have it...!!! [ GM does not remember this, lol...!!! ]

Remember in first grade when Lee Murphy was asked to read something from our "Think and Do"
reading primer, and messed up... teacher Grandma Edith sternly admonished, 'Now Lee, it is THINK
AND DO, not "Guess and Do"...!!!" [ lol ]..."

Joan made me a nice gift of banana bread, and also they gifted me with a boxed selection of the

Lunch was leftover takeout chana masala. I whipped together a raita
with yogurt, cucumber, and a dollop of jarred mint/cilantro chutney.

Dinner will be a salad and a chicken sandwich dressed with this:

Leftover corned beef is good for sandwiches. There is a reason there is
leftover cabbage.

The Lagomarsinos got around. There's a interesting road and trail named
Lagomarsino Canyon, just east of Sparks that leads to Virginia City.
The canyon even contains petroglyphs.

I prefer the drummies, too, simply because they have more meat on them.
Buffalo style wings are fine but not someting I care to make very often.

Breakfast for dinner. I'm in the mood for shredded hash browned
potatoes. I have dehydrated shredded potatoes which I'll reconstitute
along with dehydrated minced onion; drain well then cook in a small
non-stick skillet in butter until nicely browned on both sides. Two
scrambled eggs to go with it. I have some bacon I pre-cooked (baked) in
the freezer that needs to be used. I'll heat a couple of strips of it
in the microwave.

Lunch to take to work tomorrow will be leftover corned beef & cabbage.

99 cents a pound for wings is almost unbelievable.
I haven't seen them that cheap for 20 years. $1.99
is a good price.

I usually make chicken, if I'm cooking meat, because that's what's
affordable.

When I make chicken pot pie, a few times per year, I get a package of
split chicken breast on sale for a few bucks. Boil it in a small stock
pot until mostly cooked, and reserve most of the breast meat to go into
the pie filling with veggies (some for soup). I simmer rest of the
bones and scraps plus onions in the water until I have a broth. With
carrots/celery split between the pot pies and the soup, I'm left with a
pot of chicken noodle soup, plus two chicken pot pies; one goes into the
freezer.

I was shocked when I found that price; I was hoping that they'd still
have them. My guess is that there are lots of older folks in this area,
who frequent this local butcher, and view wings less as premium cuts;
more of as scraps. Hey, that works for me.

I should have started them off in a slow oven until more fat rendered
out of the wings; then turned up the heat. Alternatively, they would
have been better if I deep fried them, but the peanut oil in the fryer
smells like it has started to turn rancid. I really didn't feel like
scouring it out yesterday.
