Not your grandma's meatloaf

Made Kimchi Meatloaf this weekend. I've made it once before and loved it and this time it was even better. This is lip smacking tasty, my guests said it was like candy...not sweet but really tasty. This is the basic recipe I used.

I think Bobby Flay did one a while back.

Changed the above recipe a bit to caramelize the onions, garlic and kimchee in a skillet before adding to the mix. Chopped everything in the food processor. Made more glaze and used the extra instead of ketchup to serve. Used hot kimchi and hardly any heat came through in the loaf.

Boy that sounds good. Too bad I have no oven to cook a loaf. Sauteing the veggies beforehand and the use of milk in ground beef is a very Japanese thing to do. I can't say what the Koreans would do because I've never seen a Korean use hamburger. I've made Korean style meatloaf with a coating of fine Korean pepper. That turned orange and looked goofy as hell. Thanks for the great recipe!

I don't see why you couldn't make meatballs or patties with the mix and glaze.

In fact I think meatballs finished with the glaze would make pretty spectacular party food or appetizers.

The way I'd do it is make the glaze and add some sugar or even corn syrup, maybe some fruit juice. Reduce it down until thickened and roll those balls in the pan with the glaze until coated. That would be very good. If you do it right, the glaze would look something like this.

I would bake the meatballs then add the glaze with a brush and coat them well a couple of times a few minutes before they are done. The gochujang and sesame oil in the glaze makes it adhere and glossy. Extra glaze can be served as a dip.

Meat loaf (two woids) is my very favorite, if I had to choose one food
to live on it would be meat loaf. I make meat loaf differently all
the time, no complaints, all good. Your meat loaf looks yummy, just
needs a moistener... I'd serve it with lobster sauce.

The extra kimchi glaze works great to serve with it. The loaf itself is very moist.
