Supper Today - Sept 9th

It might not be everyone’s cup of tea, but I actually cooked today.
Homemade creamed chicken and biscuits from scratch. The biscuits came
out very well. I should not have used "honey chicken", but I used what I
had. Overall, not bad at all.

This was inspired by a semi-recent Barbara Llorente post on the
FaceBook. That, and a some leftover cooked chicken breast from last
Sunday that really needed to be used up.

It's going to be a salad here as I bought a Taylor brand bagged salad.

Not cooking, as such. Lunch was a small chicken sandwich followed by a
couple of hours mowing the lawn.

Dinner will be a salad with red-wine vinaigrette flavored with Penzey's
pizza seasoning blend, and a slice of cheesy garlic bread.

Nothing special here. We are having hamburgers. I stuffed some cheddar
cheese into the patties and we will be cooking them soon.

I grew up eating creamed chicken on biscuits but never with peas added.
When Mom made it she used drop biscuits made with Bisquik; when I make
it the drop biscuits are from scratch. I haven't made creamed chicken
and biscuits in years.

I wound up eating at a friends house yesterday (ribs) so I didn't try
the white boudin I bought yesterday. Tonight I'll be simmering a couple
of those Cajun pork & rice sausages. The rest are already portioned out
and in the freezer.

That creamed chicken might have been better if it was rather creamed breakfast sausage with biscuits.

I've had it before, but this is the first time I made it. I wouldn't
have thought to add the peas, but that's how I saw it done on
aforementioned FaceBook post.

Yeah, Barbara, aka sf. All I meant was the creamed chicken on I grew up
with didn't have added peas. I'm sure there are many different versions
of it all over.

Probably. Everybody gets their turn. Bryan once said he wants to see
me eaten by wild animals because, as a non meat eater, I'm not
occupying my position at the top of the food chain.

I'd have loved the meal. My wife would have loved it too, after picking
every pea in it, out.
I love creamed, canned shrimp on toast. My wife doesn't. She might like
creamed fresh shrimp on toast. Someday, I'll float the idea. No peas! ;)

creamed chicken sounds like chicken pot pie filling
with no crust.

i'd be ok with that, add some sliced hard boiled eggs
and sliced green olives and some fresh diced onions and
it would be like chicken-a-la-king over toast. ok, well,
my version of chicken-a-la-king...

now as for the shrimp version, i'd be ok ignoring the
shrimp entirely and just having mixed veggies or tuna
instead. shrimp just doesn't have enough flavor to me
to be worth the bother and expense and way too often it
is overcooked to the point of bits of rubber in many
dishes.

I have never understood why some people hate peas. I like them. AAMOF,
we had fresh peas for supper last night and they were great. There are
a number of vegetables that have some pretty sharp and offensive tastes,
and some that have weird textures, but... peas??

It has to so with the way it leaves your through clogged with phlegm and
then fills fills you with gas and loose bowls. It's not the taste. It's
the way it affects your digestives system. I have three brothers who
drink more milk in a day than I have had in decades.

canned peas are often rather mushy and disgusting
to some people. i can eat them but that's a food as
fuel or desperation move - i'd much rather eat frozen
peas that have been warmed up.

Yes, they are a little mushy, but IMO they taste more like fresh peas
than the frozen guys. I don't mind canned peas. That being said, I have
not eaten them in years.

RFC might implode, but I used canned peas, too. "Best by" some month in
2022. They were just fine. I've never had creamed shrimp. Those
little buggers are expensive, but I might have a bag of shrimp in the
freezer. I don't eat very much seafood.

Truth be told, I've been working on the left over biscuits and creamed
chicken since I made my post a few days ago. That and picking at a
pepperoni roll. I don't cook much since it's just me here. I have
about two servings left in the fridge, and two biscuits also. Just
split them and toss each half into the toaster. When that runs out, I
have a head of cabbage in the fridge, and I might make some noodles.

I like to put peas in fried rice. You pretty much have to use frozen peas. Canned peas in fried rice would make quite a mess.
I don't do that because my family has something against peas.

Yes, vaguely like that, but I put more work and ingredients into chicken
pot pie. I start with cooking split chicken breast in a pot of water,
and reserve the bones to keep simmering. Carrots/celery/potatoes are
split between two large pot pies and the soup that I later make in the
homemade stock. I get a lot of mileage out of a pack of split chicken
breast!

Other than a quick roux, the only other thing added was salt/pep, and a
bit of garlic powder. No fresh onion, but I did add dehy onions from a
jar, Sheldon style!

AKA: SOS ;)

I could have done it over toast, but I think I'm out of bread. Homemade
biscuits are pretty quick when you get used to making them from scratch.
I don't even measure anymore; all by eye then into a very hot oven.
The less you play with the dough, the better they are.

That's me, present! Sometimes dairy does cause me minor phlegm, but
nothing terrible. I didn't grow up drinking milk or juice, only water,
and I thank my mother for that. I did pick up drinking hot black coffee
from grandma. A cup of strong pond water occasionally, but preferably
iced (no sugar).

A glass of milk, "ice cold" or not, is very unappealing to me. I'll
finish the milk in my cereal bowl to not waste, but I really don't care
for it. I only use it for baking. The last of my milk went into
creamed chicken and biscuits. I'll buy another half gallon, eventually.

I can't stand drinking milk... growing up it was on the table for most every meal, everyone
drank it...

And I still remember the icky smell from those school lunch milk cartons, the chocolate
especially was gag - inducing...

Back in 1978 I was returning from Europe on Lufthansa German Airlines. During the lunch
service, an adjacent yank LOUDLY asked the stewardess for "a cold glass of milk". She looked at
him puzzled, and said, "Sir, is this for your baby"?... he said, "NO, it's for me...!!!" The only milk they
had on the plane was generally reserved for children...

I don't think many East Liverpool homeboys eat a lot of fish or
seafood.

My parents eventually gave up on forcing me to drink milk with meals and
started giving me tea. They could not use the nonsense about needing it
to grow strong bones because I was a really big kid. I was almost as big
as my two older brothers who were 3 and 5 years older and always the
biggest kid in my class despite being the youngest. My thoracic surgeon
commented on the size of my ribs. I guess I am proof that you don't
need to drink milk to ensure strong bones.

My sister can't stand it either. At school we used to get a 1/3pt of
milk at the mid-morning break. AIUI, Maggie Thatcher axed that program.
At home we only had milk in tea and occasionally when we had cereal for
breakfast.

I always loved milk, and at school they had whole milk.
The best to be had at home was 2%. It was government
subsidized, so it was only 2 cents for a half pint. For a
few cents I could buy extra milks, which I usually did.
Doing the math, 2 cents a half pint is 32 cents a gallon.
Using the inflation calculator from 1967 to the present,
that comes out to $2.93 a gallon, and yesterday I bought
a gallon at ALDI for $3.19.

My only comment about Micheal's creamed chicken over biscuits is I
didn't grow up eating it with bechamel/white sauce sauce including peas.
He's citing a recipe from FB by former poster 'sf' (Barbara).

I don't have a problem with steamed small fresh or frozen peas, but I
wouldn't want them added to creamed chicken. Merely a personal
preference. And definitely never canned peas. Steamed small fresh or

Normally, I'm not a fan of canned peas. They are "just OK". Mixed in
with the chicken, they were fine.

when i have frozen peas or frozen mixed vegetables on
hand it usually means i've been to the store and bought
something frozen and didn't bring an ice-pack or cold
bag with me to keep it cold enough on the homebound
commute. so i'll get a bag of frozen peas or mixed
veggies to go with the other frozen thing.

We may or may not have peas in the freezer. My wife
and son like them. I don't. We sure as fuck don't have
canned peas. No one I know would eat canned peas
unless they were starving.

in creamed chicken. It has nothing to do with not liking peas, just not

I might have a bag of frozen peas in the cellar freezer (the upstairs
freezer doesn't do much). The can was probably given to me, I don't
know. Typically, the only canned food I buy is corn kernels. I don't
much care for canned peas on a plate, but mixed in with sauce and
seasoning, and I find it acceptable. Canned ravioli or stew is a whole
other thing!

it depends upon how far we're doing our errands, but
the long run is two stores so we have to last from
the first store to the home arrival which may be up to
two hours or more in between taking the cold item off
the shelves or out of the freezer and getting home.

i am much more concientious about such things, Mom
will let things get warmer and doesn't always bother
to put things i the cold bag with the ice-packs or
other frozen foods.

i can always tell the people who grew up rather well
off from those who haven't.

well off people will eat slow and will wait until
others have their food before starting to eat.

poorer people will eat food as soon as it hits the
table in front of them and they may eat a lot faster
because if you eat fast you have a chance of getting
seconds. also they're likely to not be too picky
about what it is that is put in front of them...

it's really hard to not eat fast - it's a bad habit.

Then I eat my serving quickly. Always have. I've never
been poor.

I eat quickly because I dislike the sensation of chewed

Waiting until others have their food is a matter of manners.

When I was in the reserves the officers and NCOs always made sure that
their men got their food first. It was part of their job to ensure that
the people under them were taken care of. It was completely different
when I worked for the provincial government. Management there used their
rank to be served first. They were special and to hell with everyone else.

I'm not sure if you're trying to imply that I grew up poor or not.
Either way, I was taught to wait for everyone to be served. That is
just proper manners. There's no need to eat like a dog unless you are
one. If you're literally starved, that's a different story.

I've found that I've gotten progressively more "picky" though time.
I'll eat just about anything, but I'd have to be near starved to eat
canned pasta or a frozen meal. Simply put, I just don't buy that stuff.
The quality is not worth it. I don't trust a lot of people's cooking,
either.

I still eat like I'm poor. I just don't like pre-made, canned, and
boxed crap. I could afford better than I do, but I make a small vat of
food, and it goes all week long, at least. I'm very stingy with meat
and expensive ingredients. Yes, I will go through the 10 lb bag of
russets, much to Jill's surprise. Potatoes are cheap and versatile (and
delicious).

Canned ravioli is a whole other thing, because it's disgusting, and I
won't eat it. Same as canned stew/soup. If I am not making it from

I _am_ the elderly neighbor. Anyway, I don't know any of my neighbors.
If I thought for a while, I might be able to come up with the name
of the couple across the street, whose mailbox is adjacent to mine
(and whose mail sometimes ends up in my mailbox). Or I might come
up with the names of people who lived there previously. It's a
crapshoot.

Breakfast today was omelette du fromage. I used a pan from home. It was a newish Cuisinart stainless steel skillet with a non-stick coating. I don't use it much at home because I prefer my cheap Korean pans there. It actually performed quite well on this range. I used the smaller burner.

Canned spinach is horrific mushy green stuff. So are canned collards

Hey, I'm not surprised. :) I simply couldn't go through a 10 lb. bag of
russets before they started to sprout like crazy and get soft and mushy
and otherwise unpleasant.

Well, in this case, my elderly neighbor is poor, never married, and gets
food from a food bank. The poor guy can barely walk. He's never owned
a computer, a microwave oven, air conditioner, etc. The inside of his
house hasn't really changed since he moved in circa 1971. His television
set (only gets basic local cable) might be from the 90's. Heck, the guy
doesn't even have a telephone.

I'm sure he's quite lonely. Honestly, he's interesting to talk to. His
only employment through life was buying and selling junk at flea
markets, and everything he knows, he learned decades ago from older
folks. He's a genuine time capsule. Talking to him is like talking to
a person who was born in the late 1800's... It's almost uncanny. Very
impressive knowledge of old hand tools, also.

I dunno, all of my neighbors are rather friendly. I've been in several
of their homes, multiple times. That can also be a curse, when they
need help, or just want to have a long conversation right when I get
home out of my car, from a tiring day... And all I want to do is sit
down alone in quiet.

You fail to see the humor in this. I can't help that. One can go into any restaurant in an English speaking country and say, in a loud French-Canadian or exaggerated upper-crust British accent "I'll have one omelette of the cheese, please!" and get a laugh. That's Monty Python funny right there.
Just to clarify, "omelette du fromage" is a funny line from an American cartoon. An "omelette au fromage" is one of my favorite dishes.
