Yuk. That's just "plain" silly!
This is ridiculous. You can't eat any single food exclusively for 60
days and consider yourself eating healthy. Doesn't matter what it is.
A diet of nothing but apples or lettuce will leave you malnourished
for that long.
Potatoes are a nutritious vegetable if prepared without a ton of
additional fat. And they can and should be part of a healthy diet.
PART OF. Not the entire diet.
What about vitamins that are not found in potatoes? What about
Protein?
He would do the Potato board (or wherever he works) more of a service
if he simply ate a potato with each meal of the day, prepared in any
of the millions of ways potatoes can be prepared.

Although I agree, I think it's a great publicity stunt, and hopefully,
you can't get too malnourished in 60 days.

No mention of size, but in the pic they look like average sized
Russets. Even 20 of the tiny red ones is pretty volumous.

It's all there. 148g/5.3oz, about 7 pounds a day. Those are pretty
small potatoes, but you're right, that's a lot of bulk! Still, I've
read that the Irish pretty much lived on potatoes at times. They also
had to eat that volume of potatoes to get enough calories to live on.
