Someone asked about the availability of caramel color. I found a recipe to
make your own. This is intended as a substitute for Kitchen Bouquet (if you
want the color, but not the vegetable flavor), but by the description,
I imagine it could be used to color bread as well.

Boil some water. In a small saucepan or skillet, heat 1/4 cup of sugar,
stirring until it melts and turns dark. Continue until it no longer smells
sweet.
Slowly (it may spatter at first, add 1/4 cup boiling water. Cook briefly until
it thickens slightly. Cool and store in the refrigerator.

Any recipe for caramel color that you can make at home won't be
one percent as strong as the commercial stuff. It's made by heating
dextrose & ammonia together at high temp/pressure.
It only takes a few ml to color a gallon of soda dark brown.
