A half a spatchcocked chicken

Roasted with garlic, rosemary, parsley, sauvignon blanc, lemon juice, butter, white pepper and salt. Dried rosemary kind of sucks. The house my son might buy has a couple of very small raised beds. He has zero interest in growing anything other than herbs, you know, parsley, sage, rosemary and thyme. Oh, and oregano, though we have such a big patch of oregano that he wouldn't need to grow that. We'll definitely be seeing him often, as he wants to learn carpentry, etc. and he also wants to learn to cook.

He wants to be on his own ASAP, but not because he doesn't like his parents.
I mean, he thinks we're weird as fuck, but we get along great if we don't argue about politics. He has a libertarian mindset, much like I did when I was his age.

The chicken needed fresh rosemary, and I went too easy on the wine and lemon. It was pretty much perfectly done, meaning that a few minutes less would have been underdone, and underdone is worse than a bit overdone. I got lucky. I could claim instinct, but it was more just luck, as this was the first time I've done the "half a spatchcocked chicken." The other thing I did wrong was not letting the chicken come closer to room temp before cooking.

One thing is for sure. If I'm not stuffing the chicken, it will get spatchcocked.

I used to do chicken on the rotisserie but one day I tried a spatchcock.
Makes the best chicken on the grill. I keep the grill in the 375 range.

I use a thermometer or if I get a Purdue oven stuffer it has a pop up.

I keep thinking of doing a spatchcocked chicken. It just hasn't
happened. The best chicken we do in the gas grill is "Indian Chicken".
It calls for a grated onion, two cloves of garlic and cumin. Mix it all
together and smear it in and on the chicken and let it sit for an hour
or two. Then stick it on the spit and baste it with melted butter. It is
fantastic.

You can use the same mix of herbs, just modify the cooking. I get a
nice crispy skin and moist meat.

I wonder if chickens know how good they taste.

He *wants* to learn carpentry? He should be working for a construction
company right now.

I wish your son well but it really doesn't sound like his dream of
flipping houses is going to work out so well at this point. No credit,
no construction skills?

That not an option on mortgages. To be on the mortgage at all, you
have to demonstrate two years of steady income. Right now, he has a
lot more land than cash flow, because he's only been in the business
for about a year, and just got incorporated this month.

He already "flips" land, and he has great credit for a 19 YO, and he pays
off both of his credit cards in full every month. No matter what, that
one's going to land on his feet.

A credit rating is not so much about how much money you have, as
how responsible you are with what you've got.

Does any country admire people who spend money foolishly and
accumulate debt?
