Today I used some of the Yukon Gold for hash browns, and they did a lot
better. They take a long time to brown and cook through, but stirred
frequently on high in my Calphalon omelet pan until brown on all sides then
turned down to medium-high for the rest of the cooking, with chopped onion
bits added after the browning, they came out really good. Crispy on the
outside, firm and flavorful on the inside. I'd use them again for hash
browns or any sort of fried potatoes.
Good for mashed also.
The last mashed potatoes I made were with Yukon Gold. They were delicious.

I would advaise against boiling the Yukons in chunks: they lose their flavor
and disintegrate too easily. If you can, leave the skins on, and boil them
either whole or just cut into the largest pieces that will make a uniform
size (ie, little ones whole, big ones cut in half, etc.)
Also try this: leaving the skin on, cut some Yukon Golds into chunks of
about 1 1/2". Put them in a single layer in a shallow metal pan and toss
with good olive oil, coarse salt (kosher or sea), fresh ground pepper and
either the coarse kind of garlic powder (such as "California-style) or
minced fresh garlic. Roast, tossing with a spatula once or twice, at 400F
(or higher, depending on how much of a hurry you're in) until nicely browned
and crispy all over and cooked through. (For this, garlic powder may
actually work better than fresh which will have a tendency to burn, heresy
though it may seem.)

I left the skins on for my hash browns, they were good.

What I should have said was that the Yukons tend to disintegrate around the
edges before the centers are done. Which actually makes them perfect for
chowders, where the potatoes are often cut deliberately at an angle so that
the edge will disintegrate into the soup and thicken it. I suppose if you
cut them into uniformly small pieces this might not happen, but I find that
then you are losing a lot of flavor.

I've lived in California for going on 28 years now, and never heard of
a "California style" of garlic powder. Do you mean "granulated" -- which
is sold along side of "powder" and is coarser (because it's not powder)?

McCormick--I think--sells a style that they call "California" which is
indeed probably granulated. I think it also contains a small amount of
parsley.
More of a simmer than a boil. I cut them in half and leave the skins on,
peeling away any bruised parts. About 20 minutes.

I use Yukon Golds in potato salad. I boil them whole and then peel them with
a well-known "trick": While the potato is still pretty hot, rub it lightly
with a clean dishtowel. Most of the skin will come right off.
Different people have different ideas about what the term "hash browns"
means. If I'm cutting potatoes into small cubes which will be pan-fried, I
use russet potatoes, though you have to be very gentle with them or they'll
fall apart as they approach doneness. If I'm shredding them to be pan-fried
I'll use red potatoes or Yukon Golds.
It's possible the reason cyberbitch had the problem with still-hard potatoes
is that the soup wasn't hot enough to activate the starch. If it wasn't
boiling-hot, the potato chunks will not soften very well. That's just a
guess, based on the low burning temperature of Sterno®, which never reaches
212°F even if protected from the wind in cyberbitch's refrigerator-box home
in the alley. Of course, if the soup *was* boiling-hot, then it stands to
reason that cyberbitch fucked it up in some other way.

and half red skin potatoes. I am calling this memorable batch of potato
salad my "serendipity potato salad", I just set out to use up some lose
potatoes, odd bits of mayo (half Hellmanns low fat, half regular
Hellmanns), some kalimata olives I pitted, odd bits of leftover diced
red and sweet onions, some celery and voila! -it came out *incredibly*
well.
I peel my potatoes and then cube them before cooking, then let them cool
down spread out on a jelly roll pan.

they are hot. It makes a big difference in the amount of flavor they
absorb.
They don't charge a premium for them around here (at least in the places
where I buy them). All of the beyond basic white are usually the same
price. They were $2/5 lb for the longest time and have crept up to
$2.39/5 lb.

We use so few potatoes around our house that I don't worry much about
the price them. I have been known to buy one or two potatoes at a time,
but that is much more expensive than buying them by the bag so I
sometimes buy 5 or 10 pound bags even though half of them will probably
go bad before we use them up. Given the amount of potatoes we use it is
not a big deal to pay extra for Yukon Gold, not that I have never
noticed that they are more expensive. I like them. They make good
mashed, make excellent fries and are good for baking and roasting.

I peel them after cooking--if I peel them-- but I also dress them while hot
with a combo of chicken broth, olive oil, mustard, vinegar, garlic, onion,
and S&P. They definitely soak it up.
That's much like the mixture I use when I said "french dressing" and
chicken broth.
As to cooking whole, then peeling and cubing afterward, I changed from
doing that because I didn't like handling really hot potatoes while doing
it, and I also (at least for me) found that I would get more uniformly
cooked potatoes in each cube than from a larger potato that was cubed
later, where the cubes cut from the inner part were firmer than those from
the outer part. Just me...

Oh yeah, I forgot to mention I very liberally sprinkled the hot potatoes
with red wine vinegar as they cooled on the jelly roll pan. It was more
than I normally used in the past.

The potatoes were still warm to room temp when I dressed them. Not cold
at all. I think that improved the results a lot.
I predict you'll never be able to reproduce it,
at least never as good as the first time.
That happened to me with coleslaw once. It was delicious, and I remember
all the ingredients, but it never turned out the same again. :-(

i'm not sure how that would work with mayonnaise-only potato salad, but if
you're using oil or vinegar, adding it to the warm potatoes is the way to
go. sounds like it would save a step as well.

The mixture added to the hot potato cubes is usually entirely absorbed by
them by the time they are cool. It's at that point that I add the
remaining ingredients and my mayonnaise/sour cream based dressing. It
really works fine using both.

I killfiled her on 3/16/07, and have never regretted it. My filter has
blocked 4630 posts of hers. Greg Morrow posts intelligent and witty
things, but he just cannot resist replying to every one of her posts (at
least the ones he forced me to see). I killfiled him also, just so I
wouldn't see her posts and his useless replies to her. I killfile him
about once a week, since he continually changes his name and Email
address. I believe that he puts his name on the bottom of his posts,

It's true that I could killfile cybertwat on my computer at home. Problem
is, I post from a wide variety of machines. I often post from machines I've
never used before, and I have to set up my Usenet account anew each time.
One of the reasons I use Outlook Express is that it's available on pretty
much every Windows box out there, and setting up the account is routine by
now. Unfortunately, the filters for OE are stored in the Windows Registry
rather than on a file, so it's not feasible to put them on a disk and copy
them to a new machine, especially one which is shared by everybody in the
office.

If you used a self-contained newsreader like Xnews, you could keep the
entire configured program on a USB drive or a CD or DVD and use it
wherever you post. Not only would you not have to "setup" anything on any
computer you use, but all your filters, rules, etc., would already be in
place. Xnews does not require anything residing in the Windows registry.

I've been using the same basic news client for a long time, maybe a
decade. Before that, I used a client on a timeshare machine. When I
bought the last two Macs at home (the second one after I retired), I
discovered that the original Newswatcher didn't run under Mac OSX, which
is what was on the machines. I switched to MT-Newswatcher, which added
multithreading (the MT) and killfiling. Before that, I just ignored
spam and authors I didn't want to read, and a simple two key combination
when I was finished with a group both moved me to the next group and
marked all entries in the old group as read. The killfile is more
convenient and saves a little effort, but using my brain as a killfile
really worked fairly well.

My biggest reason for doing something like that wouldn't be the
killfile, since I can often remember who and what I don't want to read,
but to track which posts I've already read. Often posts I want to read
have the same author and subject as posts I've already read, but I can't
tell without opening them up whether I've already read them or they are
new since the last time I read the group.

configurable, and I like the fact that it would look and act the same

Since I finally killfiled Sheldon a few months ago, I seldom see his
posts. If I do see something because somebody has replied to him, then
if it looks interesting enough, I may research it. If it seems to be
true, I may use the info. If it is false, I reply with the facts as I
see them. If Sheldon gets mad at me, then I don't see his reply, since
I've killfiled him. People seldom respond to him when he is in a rage
towards somebody, so I don't see replies to his rage either.
i don't often respond *directly* to sheldon. but i make no apologies for
