Time to put on the beans

We're hosting Easter, 15-18 people, and making Mexican food.
I bought almost 5 pounds of ribeye steaks, and am boiling up a
pound of shrimp. Both pintos and black beans, both pureed.
I got two big cups of salsa verde from StL's best taqueria, and 6
10 packs of corn tortillas.

Also, today is my wife's and my 31st wedding anniversary. That
is a happy thing.

I hope they're bringing food as well. That is not going to feed 15-18
people unless your plan is only serve snacks.

Missing from the pic was cheese and the tortillas. One
group brought a giant salad, and another, a giant fruit salad.
Dessert was cheesecake cupcakes. My wife made a bunch
of them with various toppings. She even made some
chocolate ones that were popular with guests, but I can't
imagine going for a chocolate cheesecake when there are
regular vanilla ones.

Thanks. We're an old married couple. I just noticed that I
had typed "31st." It is actually our 37th.

Happy Anniversary!

Easter dinner was boring here. I thawed out a 14 pound bird and roasted
it. Sides were mashed potatoes and corn. I was going to buy fresh
green beans, but I forgot, and the grocer is closed on Easter.

Lunch was cannelloni (or whatever we want to call them):
Ground veal and chopped spinach flavored with garlic, onion, nutmeg
(just a little), salt and pepper. Rolled in pasta sheets, covered
with "spaghetti" sauce and baked. Served with mornay sauce.

I overate at lunch, so dinner will be a salad with lime vinaigrette.

Grocery stores are open today, although at least one of them is closing
early. We don't have enough serious Christians in this town to make it
worth closing.
