Mushroom Pate
This has been on the menu at the Brasserie Monmarte in downtown
Portland for over 15 years, and the owner, Abdel Omar, could not
remember who originally created this dish. I got it off rfc and have
remained quite faithful to the below version.
makes 3 cups [but I generally "halve" it]
1 1/4 pounds of Crimini mushrooms, chopped
1/2 cup of diced onions
1 1/2 teaspoons finely chopped garlic
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 cup [1 stick] unsalted butter
2 3-ounce packages cream cheese
1/4 cup canned diced chilies. [YMMV]
Place the first five items into a food processor and pulse it to
finely mince the mushrooms.
Heat up the butter in a large heavy skillet; transfer the mushroom
mixture into it and saute on low heat until all the liquid exuding
from the mushrooms has evaporated [about 15-20 minutes]
Combine with the cream cheese and green chilies. Blend well.
Place in a decorative bowl and refrigerate until well chilled,
preferably over night. Serve with French Bread or baguette.
I try not to overpower the mushroom taste with too much chilies; but
have found that the above ratios seem pretty good.
The version that served at the Cookin was a little different from the
above because I did everything by hand without the use of a processor.
It chilled for only a couple of hours.

Thanks for the recipe Samantha. Now let me get this straight, you used
about 3/4 lbs mushrooms and about 1/2 cup chilies? I am just trying to make
sure. Also, when you used the food processor do you get about the same
texture or does it come out a bit finer? I am going to make this for a
dinner party I am attending friday and I want to make sure I get something
close to what you made at the cook-in. It will impress my friends.

Hi Richard. Sorry to take so long in getting back to you, but just read your
post tonight. I'll get the hang of this yet. Yes, I halve the recipe but
double the green chilies. Like the texture and color and it doesn't seem to
detract from the taste. Using the food processor does result in a slightly finer
texture. While I prefer the hand method, I am usually in a hurry and resort to
modern technology. The secret, I think, is making sure the liquid from the
mushroom mixture evaporates fully. I also find little difference between using
lite and regular cream cheese. Hope your first attempt was a success and wowed
everyone.

She has her own address [sa...@telusplanet.net] and "No,Monic"a, I
can't/wouldn't".
But it was a real challenge [read "BITCH"] to get her machine to come
down the [LAN] wire and over to the ADSL modem attached to my machine,
so that we,she.I, could be on concurrently. But, thanks to our tech
support guy - It's Done!
The other night, we were both on the web, and I had an off site backup
going - and the ADSL performance was not particularly affected. Great
service.
