Luckily I had all the ingredients on hand.

I didn't have any ground cardamom, so I ground my own.

The recipe called for whole allspice. I wasn't about to dig around in
the finished dish looking for whole allspice, so I tied them up in
some cheesecloth along with the bay leaf.

Once the onion, garlic and ground chuck were cooked, I added a
sprinkling of masa as a thickener.

Cooked the meat mixture a little more, then deglazed with some wine. I
didn't have any red so I used a white zinfandel, just a little.

Then the spices, tomato sauce and some water were added.

It was put on the back burner to simmer while I cooked the spaghetti.

I don't have any cheddar cheese on hand so I used Queso Enchilado. It
was muy delicioso.

I did not follow the recipe verbatim.
Something inside me could not boil meat in water, I added the water
later. Nor did the recipe call for the wine I used.

Sally's Cincy Chili
soup/stew
1 quart water
2 pounds ground chuck
2 medium onions chopped fine
4 cloves garlic
2 tbs vinegar
2 8 oz cans tomato sauce
1 large bay leaf
1/2 tsp ground red pepper
2 tsp worch. sauce
1 tsp ground cumin
1 1/2 tsp salt
1/2 teaspoon ground cardamom; optional
1/4 teaspoon ground cloves; optional
5 whole allspice
3 tbs chile powder
1 tsp cinnamon
1 small piece baker's bitter choc. (1/2 oz)
Put water in large saucepan. Add ground chuck and boil slowly for 1/2
hour.
Add other ingredients and cook over low heat about 1 1/2 hours
stirring often.
Serve with very thin spaghetti and grated cheddar cheese. Have oyster
crackers and chopped onions if desired.
If chili needs thickening, try a tablespoon or two of masa flour.
