LEMON PUDDING & PIE FILLING MIX

Thanks to my mom I now have a large stockpile of French's Lemon
Pudding and Pie Filling Mix. (I've never lived in an area of
the U.S. where it was available and mom frequently would send a
bunch, a big bunch). The problem now is what else can I do with
the stuff in addition to the Pie and/or Pudding? I sent for
the recipe booklet offered by French's but the recipes were
very high in fat or costly to make.

Thanks for you help. I'll try almost anything!

There's a super dessert that's made in layers. You don't really need a
recipe for it. The bottom layer is crust (flour, butter, a little sugar,
and some finely chopped nuts--like any pie crust). Bake about 10 min. til
browned, and cool. Top with 2 8 oz. pkg of cream cheese beaten up with a
little sugar. Top this with the prepared lemon pie filling (cooled, if
it's the cooked kind.) Top that with whipped cream. Chill and serve. Great
for Spring or Summer desserts.
