malt syrup vs maltose

I was hoping to find maltose on my shopping trip yesterday, but I only
found a choice of white or brown malt syrup. I know they are derived
differently, but can they be interchanged in recipes like (for
example) cane and beet sugar are?

That is an excellent malt product. It's been sprouted and that is
hard to find sometimes. Excellent for bread baking.

I don't know what you are planning so I can't advise. However,
sprouted malt syrup is excellent for bread baking. It is, however,
extremely sticky.

Only if you don't know you can buy it all day long from any
wine-making/beer brewing store. BTW, "malted" means the barley has
been sprouted.

You are correct about the 'malted.' I was thinking barley syrup. At
the time I was looking for it I don't think we had wine or beer making
stores here. Thanks for catching that.

Jimmy Carter made brewing and wine-making legal during his admin. I
don't know if separate states are required to follow. Perhaps not.

You go into a homebrew store and ask for "malt", they'll likely steer
you to their fine assortment of grain, all of which are malted, dried
and collectively known as "malt." If instead you ask for "malt extract",
you may be asked "liquid" or "dry". Even these are usually available in
a variety of styles. TBH, I'm still confused by a traditional (boiled in
water, then baked) bagel recipe I have that calls for "malt" in the list
of ingredients. Should I use liquid or dry, light or dark, diastatic
(with the amylase enzyme still present) vs. plain?
