REC: Barley Pilaf

It's in the oven as I type. It will go well with whatever else I choose
to cook for dinner tonight; beef, chicken or fish.

Barley Pilaf

1/3 c. pearl barley
1 Tbs. butter
2 Tbs. minced onion
1 clove garlic, minced
1/2 tsp. celery salt
1/2 tsp. pepper
1 c. chicken stock

Melt the butter and saute the onions and garlic until soft and
translucent. (I did this in the microwave in a 2 quart baking dish.)
Stir in remaining ingredients. Cover and cook in a 325F oven for 1
hour. Serves 2; recipe may be doubled.

Nice.
Barley is a delicious grain, but under-used.
Barley flour is really good for pancakes, but rarely available.
Barley flakes make a good substitute for oats in things like
cookies/biscuits. (I'm allergic to oats.)
I use barley in meat loaf, instead of bread crumbs.
It also works in risotto, instead of Arborio rice.

i always have cooked barley, or farro, or bulgur wheat in the 'fridge to
put on salads. i cook it in mirepoix, chicken, or beef stock based on
what my taste-buds say on sundays when i do it. they all have a lovely
flavor and texture. i concur, barley is great in many things. i prefer
eating whole grains vs processed grains. i started doing that when i
nearly completely eliminated simple carbs from my diet, mainly bread-
stuffs and pasta.

Sounds great. My wife used to do a barley pilaf with mushrooms and beef
broth. It was delicious. We haven't had it for years. I guess maybe it
was a food fad and we moved on to other stuff. I think it is time to
revisit barley pilaf.

LOL thinking back a few decades when they were marketing a Canadian beer
as a barley sandwich.

I love barley and much prefer it to rice. It makes a nice addition to
soups. I really should make some Scotch Broth soon; need to buy some
lamb shanks. :) Pearl barley is becoming hard to find at local grocery
stores. I ordered some from Amazon.

You could substitute beef broth and add mushrooms to this. It's quite a
nice grain.
