What to do when you can't sleep?

You fire up the smoker at 10:30PM and start a whole brisket (only a
baby 9 pounder) because a cold front is coming in and, "we'll
probably see snow". "Snow" MY ASS! But we did get sleet.

The pastrami was done just in time for "breakfast" at 7:AM - which
is my "dinner".

The "sauerkraut" on the Reuben is napa cabbage, carrot, and green
onion marinated in rice wine vinegar, a pinch or three of sugar and
fresh grated horseradish for 3 days.

On Day #2 that same "sauerkraut" was called "do chua" next to my
Vietnamese grilled spicy lemongrass beef.

Served with mam nem (the REALLY stinky stuff - its' too hardcore for
even Vietnamese people) on "sheets" of pressed rice noodles - AKA
Banh Hoi noodles.

That all looks great. I rarely have trouble falling asleep, but I sometimes
wake up two or three hours early and can't get back down. It would be
a disservice to my husband to rattle around in the kitchen, so I usually
just read.

It may have been as disservice to the neighbors when I cleaned out
my smoker starting at about 2:AM .... Monday night I think?

I was being pro-active, Usually I just wait until it catches on
fire and then throw it away.

Sandwich looks good, would be better on seeded rye & Guldens spicey
brown, a fermented garlic dill pickle and Ballantine Ale, not too
cold. As a young man I'd buy Ballantine Ale in quart bottles. In NY
alcohol was allowed at 18. My Aunt & Uncle owned a small grocery
store in the Catskills, Woodridge, NY. I went back about ten years
ago, the small pristine village became a slum, never got out of my
car.

I will admit to having an old man bladder. I usually wake up at least
one during the night and learned a long time ago that it is best to get
up and have a pee and then go back to sleep, because I am not going to
get back to sleep unless I do, and the longer I fight it the less likely
I am to get back to sleep. Getting back to sleep after two hours of
sleep isn't a problem, but if I am awakened after my first hour of sleep
I will be awake for hours.It's like waking up recharged after a power nap.

You need to be seen by a Urologist. A lot of men fight an enlarged
prostate until it becomes cancerous.

I monitor that. I know I am at risk because my father died of prostate
cancer. My good friend suffers from prostate problems.... not cancer.
He and I raise finds for prostate research and education in the annual
Motorcycle Ride for Dads. In fact, he is one of the top fundraisers in
the country. This year he raised more than $10,000 in donations and
pledges.

Ahh, Dr. SKatz ... We haven't heard you lately.

Waking up during the night to urinate isn't a sign of an enlarged
prostate. Furthermore, an enlarged prostate is not a cancer of any
sort, nor is it a symptom of cancer and does not lead to any sort of
cancer.

YOU are the Cancer, Sheldon.

That is grilled seeded light rye. And I already have two brassicas
in there already (cabbage and horseradish twice). And those ARE
fermented cucumbers - cucumber kimchi.

If you want one too, then make one, little person!

Just don't start with a corned beef. You can't control the sale in
those things. Wet brining and trying to leech salt out after the
fact just removes flavor.

Dry cure of the win - ALWAYS!. It only takes 4 days (this one went
6). I jut got a new bag of pink salt #1 and then found 2 little 4oz
shaker bottles in the pantry unopened. Need a few lines?

On a related note.... My wife occasionally does a glazed peameal. Being
a brined pork loin, peameal is as salty as corned beef. He simmers it
for an hour or so in apple juice. That sucks out a lot of the salt....
or maybe just adds the sweetness to balance it. Then it is glazed and
baked.

I have a two pound bag of Morton's "Tender Quick" that's thirty years old.
I can't remember why I bought it. It can't go bad, can it? It's a salt
or mixture thereof.

I discovered something. I don't want to over-share but I had an ongoing
and worsening problem with frequent urination. I would be lucky to last
an hour without having to pee and would be up 3-4 times a night. After
I was in the hospital last year I was told to avoid caffiene and
alcohol. It's not just a diuretic. It aggravates the bladder. I stuck
to decaffeinated coffee and tea for a while and the problem went away. I
was sleeping through the night. When I was given the OK to have caffeine
again I started to have to pee more often.

The prostate and bladder are not the same organs, your bladder is just
below your navel. The bladder is checked by an RN with an ultra
sound, that's done from the front, no penetration and no touching.
They first have you fill a container with urine and check if your
bladder has emptied.
Seems you're ascared to have the Urologist stick a finger up your butt
to feel if your prostate is enlarged and/or rough/bumpy instead of
smooth. I go to a female Urologist, Dr. Linda has thin female fingers
and lovely deep cleavage. I don't feel any discomfort, the only
negative is wiping the blob of KY off my butt.
At the very least have your doctor prescribe a PSA test with your
blood work.

Then he should go to a good crotch barber and get those long pubes
trimmed. Popeye has posted about his skill at grooming crotches, so
