Hi Chocolate Fans.
1)Recently I bought a Chocolove 70% cacoa 1 oz(37 gram) bar.
2)It was not bad until compared to my Guittard 72% cacao blend No. 07.
3)At the same time i had in stock in my pantry my Trader Joe's
72% Pound Plus chocolate bar.
4)Yesterday I bought a Guittard 62% semiseet chocolate.
This is a limited edition blend intended to celebrate the
long time they have been in the Chocolate business and recreates the
first product they put out with beans sourced from the same regions
as then in 1868
1) had not been conched as long as my
2) much better and obviously had been conched longer and
perhaps the beans had been better chosen.
3) very earthy and powerful taste lacking the extended conching
but I would perfer it to #1.
4) Is described as "early mild fresh fruit acidity with notes of
pineapple, dark cherry, slight under-ripe banana and hints of citrus."
Well the dark cherry was out in front. If this was a 72% bar
I might switch from #2 but this will not be a regular Guittard production.
If you can get either of the Guittard bars got for them/
Ir you can get Trader Joe's try that.0
