cheese?

This recipe comes from "Fanny Farmer". It's not much like a cheesecake
using cream cheese but it is quite tasty (and far better for you!).

Cottage Cheese Pie

Crust:
1 1/2 cups fine crumbs (graham cracker, gingersnap, rusk, zweibach, or
vanilla wafers)
1/2 cup sugar (or less)
1/2 cup melted butter or margarine

Prepare the crumbs and add the sugar and butter. Mix well. If you will
need crumbs for the top of the pie, set 1/2 cup aside and line a 9-inch
pie pan with the rest, patting firmly with your fingers or the back of a
spoon.
Chill until firm in the refrigerator or bake 8 minutes at 375F and chill.

Filling:
1 pound cottage cheese (not creamed)
1/3 cup sugar
1/2 tsp. salt
1/2 cup light cream (1/3 cup for 9" pie)
3 eggs, well beaten
2 tbsp. melted butter
Grated rind and juice of 1 lemon.

Set aside 1/2 cup of the buttered crumbs while making the shell.
(Presumably these are for the top of the pie, though this is not mentioned).
Set the oven at 350F. Press cottage cheese through a fine sieve or whirl
in a blender (or food processor). Add the remaining ingredients and pour
into the crumb shell. Bake until firm (about 1 hour).

Serves 6.

Raisin Cottage Cheese Pie: Add 1/2 cup raisins.
