Here's one you might like.

> This recipe is from the famous Dooky Chase's Restaurant in New Orleans

Title: Fashioned Sweet Potato Pie

1/2 c Butter, softened
1 c Mashed,cooked sweet potatoes
1/3 c Corn syrup
1/2 ts Salt
1 Unbaked pie shell
1/2 c Packed brown sugar
3 Eggs,lightly beaten
1/3 c Milk
1 ts Vanilla extract

Cream butter and brown sugar in bowl until light and fluffy.Blend in
sweet potato and eggs.Add next 4 ingredients;mix well.Pour into pie
shell.Bake in a 425 degree oven for 10 minutes.Reduce heat to 325
degrees and bake 35 to 45 minutes longer or until well "set" . From

Title: Sweet Potato Pie

Yield: 8 Servings

1 1/3 lb Sweet potatoes or yams
1/3 c Butter or margarine;softened
3 tb Granulated sugar
3 tb Brown sugar, packed
1/4 ts Salt
1/4 ts Ground nutmeg
1 Egg; beaten
2/3 c Milk
1 1/2 ts Vanilla
1 Pie shell, 9-inch, unbaked

Cook potatoes in boiling salted water until tender. Drain, peel and
mash. Combine butter, sugars, salt and nutmeg in large mixer bowl.
Beat at medium speed until creamy. Beat in sweet potatoes until well
mixed. Beat in egg. Gradually add milk and vanilla and beat at low
speed. Spoon into unbaked pie shell. Bake at 350 degrees 50 to 60
minutes or until set. Cool to room temperature before serving. Store
in refrigerator until ready to serve.

3 1/2 c Sweet potatoes, cook/mash
1/2 c Butter, softened
2 c Sugar
4 ea Eggs
1/2 ts Salt
1/2 ts Nutmeg
13 oz Evaporated Milk
2 ts Lemon extract
2 ea Deep dish unbaked pie shells

beating well. After each one, stir in salt, nutmeg, milk and
extract. Pour into 2 deep dish unbaked, pie shells. Bake at 425 for
20 minutes. Then lower oven to 325 and bake for 30-40 minutes longer.

Boil potatoes until tender (20-30 minutes). Drain and peel.

In a blender, put the potatoes, sugar and butter. Mix up a little,
then add eggs, vanilla and nutmeg. Blend ingredients together well,
until mixture is very smooth. Pour into unbaked pie shell and bake at
375 degrees F. for 45-55 minutes until filling is set.

NOTES:

* This is an extremely simple and extremely good pie recipe. You can
even cheat and use store-bought pie crusts, in which case the whole
thing takes about 5 minutes to put together. Yield: Serves 3-8.

* If you don't want to make your own pie shell, I find that the Pet
Ritz factory pie shells work well.

Title: Sweet Potato & Cranberry Quiche

1/2 lb Sweet potatoes
1/2 lb Carrots
1/2 lb Cranberries
2/3 c Sugar
1/2 c Milk
4 Eggs
1/2 lb Cream cheese
1 ds Nutmeg
1 ds Salt
1 Quiche shell,
-pre-baked
-(about 11 inches)

Start some salted water boiling. Preheat oven to 375 degrees F. Peel
and grate the sweet potatoes. Grate carrots. Put these vegetables
into an empty saucepan. Pour the boiling water over the saucepan full
of vegetables and bring to a boil. Cook five minutes; drain.

Wash cranberries and pick out the ones that are soft or blemished.
Put the cranberries in an enameled pot with the sugar and cook them,
covered, over low heat for 10 minutes, stirring occasionally. Remove
the lid and cook for five minutes more, stirring almost constantly.

Add cooked drained potato/carrot mixture to cranberries and cook for
3 to 4 minutes more, stirring constantly.

Beat together the milk, eggs, cream cheese, a little nutmeg and a
dash of salt. Stir in the cooked vegetable mixture and pour this
filling carefully into the prepared shell. Bake at 375 degrees F. for
40 minutes or until the top is golden and firm. Serve.

NOTES:

* Sweet potatoes, carrots and cranberries in cream cheese quiche --
This recipe has become a real holiday favorite in our family. It is
originally from "The Vegetarian Epicure, Book Two" by Anna Thomas. It
is sweeter than most quiches, but not as sweet as most pies, and can
be eaten either as a side dish, or as dessert. We usually eat it with
the turkey because no one wants to wait until dessert time!

Title: Harvest Sweet Potato Pie

1 ea 9" single pie crust
1 1/4 c Mashed cooked sweet potatoes
1/2 c Light brown sugar, packed
1/2 ts Salt
1/4 ts Ground cinnamon
Pinch ground nutmeg
2 lg Eggs, slightly beaten
1/2 c Plain yogurt
1/4 c Milk
1 tb Unsalted butter, melted
Pecan halves
Sweetened whipped cream

Heat oven to 400 degrees. Stir sweet potatoes, brown sugar, salt,
cinnamon and nutmeg in a large bowl until well blended. Whisk in
remaining ingredients EXCEPT pecan halves and whipping cream. Spoon
into pie shell. If desired, arrange pecan halves in a decorative
circle around edge of pie. Bake pie in center of oven 45 minutes or
until the tip of a pointed knife inserted in center of pie comes out
clean and crust is golden brown. Cool pie on wire rack until room
temperature. Serve with whipped cream.

2 md Sweet potatoes; diced
1 Stick unsalted butter
1 c Sugar
2 lg Eggs; beaten
1/4 c Buttermilk
1/2 ts Vanilla extract

Preheat oven to 325 degrees. Place the potatoes in cold water, bring
to a boil and cook until tender, 15 to 20 minutes. Drain, and mash
the potatoes while hot with the butter and sugar. Let this mixture
cool slightly and stir in the beaten eggs, buttermilk and vanilla.
Bake 45 minutes to one hour, or until set.
