Snackin' Cake

Does anybody remember this? It was a mix by Betty Crocker or Duncan
Hines in the late 70s-early 80s. There was a chocolate chip one that
was great. I'd love to make something myself that comes close, but
how? Every once in a while I'll toss in some chips in a plain batter &
hope, but it's just not the same. Does anyone have a recipe?

Betty Crocker made it. I was partial to the banana walnut flavor
myself. Don't have a recipe for it, but General Mills (who makes BC
products) just put out a new version called Stir 'n Frost that sounds
very similar. Not sure what flavors they have, but if you call and
suggest one they might add it.

I remember those cakes. Didn't they came out about the same time as
Wondra Flour and contained Wondra in the mix so they mixed up easily?

If I recall, didn't you mix them in the 9X9 square pan? You made a "well" in
dry mix, added an egg and then some vinegar? I do remember liking them!

70's flashback! I remember those. I loved the chocolate chip cake. I
don't have a recipe, but I saw something similar called Stir and
Frost(?) at the supermarket over the holidays.

Here are some snackin(g) cakes I found on the web.

APPLE CHIP SNACKING CAKE

2 eggs
1/2 cup vegetable oil
1/4 cup apple juice
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1 cup granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1-1/2 cups chopped peeled tart apples
3/4 cup Hershey's Semi-Sweet Chocolate Chips or Hershey's Mini Chips
Semi-Sweet Chocolate
1/2 cup chopped nuts
Powdered sugar or whipped topping and ground cinnamon (optional)

Heat oven to 350 degrees Fahrenheit. Grease and flour 8 or 9-inch square
baking pan. In large bowl, beat eggs slightly; add oil, apple juice and
vanilla. Stir together flour, granulated sugar, baking soda, cinnamon and
salt; stir into batter until blended. Add apples, chocolate chips and nuts;
stir until well blended. Pour batter into prepared pan. Bake 40 to 45
minutes or until cake begins to pull away from sides of pan. Cool completely
in pan on wire rack. Sprinkle powdered sugar over top or serve with dollop
of whipped topping sprinkled with cinnamon, if desired. 9 servings.

COCOA-COCONUT SNACKIN' CAKE

1/4 cup (1/2 stick) butter or margarine, melted
1/3 cup Hershey's Cocoa
1 carton (8 oz.) dairy sour cream
1-1/4 cups all-purpose flour
1 cup sugar
3/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs, slightly beaten
1 cup Mounds Sweetened Coconut Flakes
1/2 cup chopped nuts
Powdered sugar (optional)

Heat oven to 350°F. Grease 9-inch square baking pan. In small bowl, combine
butter and cocoa; stir in sour cream. In large bowl, stir together flour,
sugar, baking soda and salt. Add cocoa mixture and eggs; stir until dry
ingredients are moistened. Stir in coconut and nuts. Spread batter into
prepared pan. Bake 30 to 35 minutes or until wooden pick inserted in center
comes out clean. Cool completely in pan on wire rack. Sift powdered sugar
over top, if desired. 9 to 12 servings.

Apple Snackin' Cake

Ingredients:

Vegetable cooking spray
2 tablespoons margarine, softened
1/3 cup sugar
2 egg whites
1/3 cup skim milk
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3 cups peeled, thinly sliced Golden
Delicious apple
3 tablespoons all-purpose flour
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1 tablespoon margarine, melted

Instructions:

1 Lining the baking pan with foil makes
it easy to lift out the cooled cake to
take on your picnic. And there's no pan
to clean up, either.

2 Line a 9-inch square baking pan with
aluminum foil, allowing 6 inches of foil
to extend over two opposite sides of pan.
Coat foil with cooking spray; set aside.

3 Cream 2 tablespoons margarine and sugar
at medium speed of an electric mixer
until light and fluffy (about 5 minutes).
Add egg whites; beat 2 minutes at medium
speed or until well blended. Add milk,
applesauce, and vanilla; mix well.

4 Combine 1-1/3 cups flour, baking
powder, and salt. Add to creamed mixture,
stirring just until moistened. Spread
into prepared pan; arrange apple slices
in a single layer in 3 rows, core side
down, on top of batter, pressing gently
into batter.

5 Combine 3 tablespoons flour, brown
sugar, and cinnamon; stir well. Add
melted margarine, and toss well; sprinkle
over apples. Bake at 350 deg for 45
minutes or until browned; cool completely
in pan. Yield: 9 servings (serving size:
3-inch square piece).

Applesauce Snackin Cake - Lowcal

* 1 oz. 100% Bran
* 1-1/4 cups Applesauce
* 1/2 cup Egg Beaters
* 1/2 cup Light Molasses
* 1-1/2 cups All Purpose Flour
* 1 tsp. Baking Soda
* 1 tsp. Cinnamon
* 1 cup Brown Sugar
* 1/2 cup Margarine
* 1/2 cup Raisins
* 2 Tbsp. Confectioner's Sugar

Put out margarine to soften. Mix bran, applesauce, egg beaters,
and molasses; let stand 5 minutes. Blend flour, baking soda, and
cinnamon; set aside. With mixer, beat sugar and margarine until
creamy. Beat in bran mixture until smooth. Blend in flour mixture;
stir in raisins. Spread batter evenly in an ungreased 13x9x2-inch
baking pan. Bake at 350 degrees F. for 35 to 40 minutes or until
toothpick inserted comes out clean. Cool in pan on wire rack.
Sprinkle with confectioner's sugar if desired; cut into 24
(2x2-inch) squares.

I remember making these when I was 10 years old- Add water and stir.

I found at the Walmart a package from Betty Crocker Chocolate Chip muffin mix.
It IS THE SAME as snackin' cake--- The original cake was 15.75oz and these $1 packages are 6.5oz so I mixed two together and had my Snackin' Cake again-- Is this thread really 17 years old ???
