What is easiest is doubtless a matter of personal taste...however, with
a two year old (or several) I would choose the simplest and least
sugar. Whipped cream and cream cheese frosting are both less rich than
buttercream, and easier than rolled fondant. As for cake, if you want
easy, get a box mix. It's not as though you're contending with
discriminating palates! =)

Before you buy.
Here is my recipe:
2 lbs. powdered sugar
1 1/2 cups shortening
1 tsp. extract (I prefer almond, vanilla or butter)
3/4 cup of water (more if needed)
Combine sugar and shortening in mixing bowl. Whip for 10 minutes. Add
extract and 1/2 cup water. Beat, adding more water as needed to make a
light spreading consistency.
To color, divide into smaller bowls the amount you need to color. Add
liquid coloring a couple drops at a time til desired color. If you use
paste, add tiny amounts with a toothpick until ALMOST the desired color.
Paste colored icings will darken.
As for the cake, a yellow or white cake is a good choice. Most people
can eat it without worrying about allergies, like with chocolate. Add
your favorite flavoring to customize. I like orange or lemon : )
