Graham Cracker Substitute

I live in the Netherlands now, and I can't find graham crackers or
crumbs. Any ideas for a substitute for the base of cheesecakes?

In Germany a similar cookie was called Balsenkekse, or Butterkekse made
from the company Balsen. In a yellow or white package. The flour is
finer so the cookies will make a finer dough but it worked fine for me
when I was there!

Actually, I had a recipe for Key Lime Cheescake which used Zwieback
Toasts (those things that babies chew on when cutting teeth) for the
crust. All I did was process them to make crumbs, added some sugar and
melted butter, then press into your springform pan !

I rarely use graham crackers anymore. I take whatever cookie/cracker
flavor will go with the cheesecake and into the food processor it goes.
Ginger snaps, oreos, vanilla and chocolate wafers come to mind. My next
invention will be a ginger cheesecake with a lemon cookie crust! (think
those leomon cooler cookies covered with powdered sugar)

Digestives are bisquits (cookies) from England, produced by McVities. They
are widely available in Europe to my knowledge. I'm sure they're available
in the US aswell but I can't remember.

They are made from wheatmeal I think, some come half covered in chocolate
like Hob Nobs, some with cream filling and some plain, also produced as a
light version.

If you still have your heart set on graham crackers and want to go to the
trouble of making your own, then here's a recipe you might try :

Graham Crackers (Source: Recipes from the Old Mill, by Sarah E. Myers &
Mary Beth Lind)

3 1/2 cups whole wheat flour ( try to find a product actually called
graham flour for best results)
1/4 tsp. salt
1/2 tsp. cinnamon (optional)
1/2 cup brown sugar
1/3 cup instant nonfat dry milk
1 1/2 tsp. baking powder
1/4 cup oil
3/4 cup water


1) Combine flour, salt, cinnamon, brown sugar, dry milk, and baking
powder in a mixing bowl.

2) Mix oil and water together. Add to dry ingredients and mix well.
Chill dough in regrigerator one hour.

3) Turn dough out on lightly floured board. Divide dough into thirds.
On waxed paper, roll each third about 1/8" thick. Cut into 2"
squares. Peel crackers off waxed paper and place on lightly oiled
cookie sheet. Prick with a fork.

4) Bake at 375 degrees F for 15 minutes or until golden brown. Makes
about 60 crackers.

What kind of packaged cookies can you get?
GInger cookies would probably be good.
