Does anyone have a receipe for a white cream donut filling like that have
at Dunkin Donuts or Krispy Kreme (sp?)?

NO WAY!! I love marshmallow fluff but isn't anything like the cream in a
Dunkin' Donut's doughnut. That is more like a thick, sweet whipped cream
or something.

I don't have their recipe, but this is a very good and
easy one I use for donuts and eclairs for creamy vanilla
fillings:

In small bowl, blend 1 small pkg vanilla instant pudding and
1 cup milk on low speed. Add 1 pint chilled whipping cream
and 1/2 tsp. vanilla and beat until soft peaks form.

I have a recipe for Whoopie Pies (Pennsylvania Dutch) that has a white
fluffy filling that holds it shape. One of my roommates in college used to
get them in her care packages. It calls for a LOT of shortening so I
havenıt posted it - you know, cholesteral and all that. If you are
interested just email me ( Happy...@gl.tfnet.org ) and Iıll send it, or
else I can post it here.

In my experience, working at a bakery where donuts are the bread and
butter of the business, the cream in cream filled donuts is watered down
buttercream. If i wanted to make it I would use my favorite buttercream
recipie and just make it a lot softer than I would have for icing a cake.

Happy, I have a fond childhood memory of the Filled Long John's that the
local super market made in my native Mt. Vernon, Iowa. They were filled
with fluffy, smooth, almost glistening white creme that was probably
loaded with shortening and confectioners suger. I loved it. I can't
tell you how many times I begged for the recipe. To this day I still get
the same answer--no. I would love to see what you have come up with!

I did some more research and discovered that at least one doughnut shop
in my area does what Jennifer suggested--make a soft (shortening based)
buttercream. I also found one bakery that buys a pre-made product and
they read me the ingredients:

The white creme filling is a Non-Dairy product. It contains Corn Syrup,
Water, Hydrogenated Palmseed Oil, Soy Oil, Soy Protein Concentrate (a
Milk Derivative) Sodium Calsinate, Sugar and Vanilla Flavoring.

Interesting huh? Corn Syrup, Shortening, Oil, Soy Protein Concentrate,
Salt (?), Sugar (I'm guessing powdered sugar) and flavoring. No gelatin
or marshmellows, no eggs. I wonder where one would find Soy Protein
Concentrate and Sodium Calsinate?
I bet Dunkin' Doughnuts uses a pre-made product. -Just a thought.

This seems rather confused; they probably misread the package to you.
"Milk" usually means the liquid stuff from cows, and soy protein is
quite different from milk (although, of course, there is a product
called soy milk). OTOH, casein is the protein in milk. I suspect
that the above should indicate that "a milk derivative" refers to
sodium caseinate.

This is my sister-in-laws recipe.....see if this is what you need:

Suzy-Q Frosting/Filling

3 cups powdered sugar Dash Salt
1/2 c. vegetable oil 1 large egg white
1/2 c. shortening 1 tsp. vanilla
1/2 c. soft margarine

Combine all ingredients except egg white and vanilla.
Beat for 5 minutes. Add egg white and vanilla, beat for
additional 3 minutes.

Enjoy!

I asked my Sister-in-Law who used to work at Dunkin Donuts and she
said the cream consists of

Shortening
Powdered Sugar
Vanilla
Salt
Water

She could not remember the amounts, but that it was mostly shortening.
It does sound mostly like a butter cream, maybe you could start with
those amounts and just make it softer.

1/4 cup vegetable shortening
1/4 cup butter or 1/4 cup margarine
1/2 teaspoon clear vanilla extract
2 cups sifted confectioners' sugar
1 tablespoon evaporated milk

BUT WHAT'S THE NAME OF THE DUNKIN DONUTS DONUT?
Once in a blue moon i will have one.
I think when DD puts them out on the racks they display them as BOSTON CREME. This is a downright lie. Boston cream is yellowish and sucks compared to the white fluffy creme.

I know the cream that you are talking about. Years ago there used to be Margaret's Donuts, loooong before Krispy Kreme, and they made this wicked donut with chocolate on top and inside of it was this sweet white cream that had a texture similar to whipped cream but it wasn't whipped cream, it was way better!! I am also on the hunt for this cream, I've googled it and I came up with recipes for something called "Holland Cream" check it out.

It is definitely a thick buttercream not to be confused with icing I work there and fill them everyday. I ate the filling by its self it smells so good as well.

I work at Dunkin. they call it butter cream, but it is closer to Holland cream. it is in the Bismarck and the vanilla creme donut. Bavarians and bostons have Bavarian cream which is like pudding.
