There have been recordings made of dancing feet but they're always
sufficiently mixed in with other instruments that you can't listen to the
feet in isolation. Some examples are by John Hartford. I believe some of
Mike Seeger's recordings also have feet on them; check out "A. Robic & the
Exertions".
Two possibilities: either play along with the music that's already on the
records, or have a local dancer record his/her feet for you.

How about playing along to videos of dancers dancing
such dances? You can turn down the sound. Plenty
of such videos have been announced here.
There are some recordings with feet -- usually the
musicians feet. You could use some sound editing
software that would emphasize the old hard shoe.

It would nto be hard to make recordings like that. Go to any West
Virgina Old time music festival where there is a floor and put some
kind of contact mic on that floor - you'll get your recordings.
If you talked to any clogging (apalachian style) performing group, I'm
pretty sure they woul et you record them and there would be soem easy
ways to do it.
