Make sure the fire is hot...really hot......and you shouldn't get the
"greasies". I use pretty much the same mix sometimes throwing in Cajun
seasoning or using onion ring batter.

Use a thermometer to check your temp, if its too hot you will not like the

I know a killer way to cook catfish. Maybe it will work on other fish.
Place your fillets in a bowl of ordinary cheap mustard, such as French's for
about 20 minutes. Run your fingers over the fish so as to squeegie most of
the mustard back into the bowl, then bread or batter as usual and either pan
fry or deep fry. You won't believe it. I usually use Zatarain's cajun fish
fry breading.

Ever try "Shore Lunch"? I get it at one of the bait shops. You need a can
of beer to mix with the prepared ingredients and it's excellent! There is a
regular and a Cajun preparation.
