The only yeast I get in my kits are Lalvin yeast (mostly EC-1118). Anybody
knows if the companie make a yeast equivalent to Côte des Blancs (formerly
Epernay 2)? ( Yes I asked the companie, no answer yet)

Guy,

if you want a yeast like Cote des Blanc, why not simply use Cote des
Blancs? It is difficult to answer the question without knowing why you want
a yeast like Cote des Blancs, but not Cote des Blancs itself.

Because I cannot get côte des Blancs, that's it. I cannot get DAP either.
Everybody I talked to don't know this darn thing. I want Côte des Blancs
because it is sensitive to cold shocks, to make a sweet wine, etc.

Salut Guy.
You should try "Vinothèque" ils sont a Montréal (Dorval) 514 684-1331.
Ils ont le plus grand choix de matériels pour la fabrication de vin dans
les environs.
If they cant get, You can order from that supply in Ontario
www.vaxxine.com/fwine/
Since they are in Canada it make it easy to deal with. The prices are
also about 30% cheaper than in Montral.
Mais je te le dit, tu dois voir la boutique Vinothèque, ils ont vraiment
un bon inventaire.
Salut.
François.

Guy,

Don't know where you are, but try Presque Isle in Northeast, PA or The Wine
Lab in Napa, CA. That's one supplier on each coast. Or you can try the
brewing supply wholesaler Crosby& Baker in either Westport, MA or Atlanta,
GA. They won't sell you direct, but they could tell you who THEYsell CdB to.

Guy,

if you can't get Cote des Blancs from one of the online sources mentioned
in the other replies you've received, then try to get Lalvin 71B. It is not
nearly as sensitive to cold shock as Cote des Blancs, but it is the closest
thing Cote des Blancs I know of, but it is a poor substitute. I've never
found another yeast so suited for making semi-dry wines as is Cote des
Blancs (but I would probably switch to 71B if I could not acquire Cote des
Blancs).

Hope this helps,
Kirk
