I posted a picture of the wedding cake I made last night and delivered
this afternoon on my webshots under folder CAKES. The color on this
one was a bit of a challenge. The bride wanted "Periwinkle" for her
colors, and I had no color sample to match, so I went through my sons
Crayola Crayons, and found the crayon color Periwinkle to use as a
color match! LOL
It worked great! The only thing I have found about using colors in
icing with pinks and lavendars, is that they fade in bright light, or
look different in pictures. Periwinkle is an almost bluish lavendar,
and in my pictures it looks like light blue!
I was pleased with how it turned out!

Hi Linda,
I must say that you do fabulous work!! Did you go to school to become a cake
chef?? Where do you work from? Do you own a business? I am very curious.
God Bless,
Dorothy in NY
PS: Are all those cakes made with buttercream or whip cream?

Hi Dorothy. Thanks for the compliment! No I didn't go to school to
learn decorating or baking! Unless you count the "school" of on the job
training and various persons who have taught me things through the
years.
I started decorating just playing around with a DIY Wilton kit my mom
purchased. I think I was 18. I was working in a restaurant as a
cook/caterer/dessert maker, and the lady I worked for was instrumental
in training me for baking, cooking, and I owe a lot to her for
believing in my talents in the kitchen! :-)
I now work in a grocery store bakery as my full time job, and I make
wedding cakes at home on the side. We didn't used to offer wedding
cakes from our bakery and I would get some of my at home business by
giving a customer my card, and they would contact me at home after my
work hours. we offer them at work now, but it is a very limited
program.
I use buttercream icing for all my cakes. At work we do both kinds of
icing.

Linda that is a beautiful cake!! I looked at all your cakes and am just in
awe! After my mess with my DS #2's birthday cake today, you wouldn't even
let me in the door! LOL

He wanted a chocolate cake, marshmallow filling and chocolate frosting.
Okay, no problem. I get home from work this morning, make the cake; notice
as I'm pouring the batter into the layer pans that it looks a little light
for choco cake. Pull it out when it's done, let them cool a little then
remove them from the pans. I broke one layer trying to turn it over. Okay,
no problem, that's why we have frosting; to "glue" the broken layer back
together. Right? So after they cooled I get out the cake plate put the
broken layer on the bottom, after "gluing" it back together. Notice that it
won't go back together as there is a piece missing out of the bottom of it.
Where did it go? I knew I could fill in the hole in the top with frosting
so we (DH and I) sampled the cake, I didn't add enough cocoa so it's not
chocolately. Then I realize that I can't spread the marshmallow fluff on
the broken layer so I take it off, put the whole layer on the plate. Then I
spread out the marshmallow fluff. Hey this is going to work!! I then put
the broken layer back on, gluing and filling in with frosting where needed.
Turn around to answer DS #2's question and in the middle of answering he
says, "uh Mom, (pointing behind me) is it supposed to do that?!" I turn
around and the 3 pieces had slide off the bottom layer. ROFL I then pushed
them back on, they slid off again! I got out a bowl that was big enough to
hold the cake, pushed the pieces back up again, picked up both layers and
set it in the bowl. Made the chocolate frosting, frosted it and covered it
up! LOOKS AWFUL!!!!!!!!!

I then went and sat on DH lap, he asked what was wrong I told him about the
cake. I didn't want to serve it to our parents tonight! He asked what he
could do to make it better. "Tell me to go to TCBY and buy Daniel an
ice-cream cake." Okay honey, why don't you go get Daniel an ice-cream cake.

I was supposed to make the boy supper tonight, but after my cake failure I
told him I couldn't face another, we just ordered pizza!

Linda, I'm so impressed with your talent!

Kenda,
My grandmother couldn't make a cake worth a darn (she was a fantastic pie
maker though). Her sister made wedding cakes and coudn't make pies.
Whenever my grandmother made us a cake she used a recipe where the icing
cooked in the bottom of the cake and when she turned it out after baking the
icing was on top. If the cake fell apart she put it in bowls and put a glob
of whipped cream on top and called it 'dump cake.' We didn't care - it was
great!!!
I'll have to use that recipe in a swap.

Poor Kenda! We had a disaster like that with my grandparent's Golden
Wedding cake... my mother baked an apricot cake and it turned out nice
enough, but then she made up a cream-cheese frosting and when she put
the cake together the frosting was very runny... so we were carrying
it to grandma's in the car and as soon as we went around the first
corner the top slid off the cake and broke! It just has to be a super
special occasion cake that fails doesn't it...

And Linda, your cakes are all gorgeous! I'm sure you don't have any
disasters...

LOL Mom was given a recipe for a scrumptous carrot cake by a friend,
pineapple, carrots, and I can't remember what all else was in it. Well, she
bought the ingredients and made it one Sunday while staying home with my
older brother since he was sick. Somewhere in the midst of her mixing up
the cake, my DB went into the kitchen to apologize for breaking the sugar
bowl lid from Mom's GOOD dishes (wedding present kind of good dishes!) and
told her he was going to save his money and buy her a new one. Not a good
time to do this bro...it just reminded Mom of how her sugar bowl lid got
broken, etc. So she assured him that yes he was going to pay for a new one
and slammed the cake in the oven. She went back later to turn the temp.
down as the recipe stated, and the cake was bubbling. Cakes aren't supposed
to bubble!! That's when she realized in her irritation with DB, she forgot
to put the dry ingredients in the cake. She didn't want to waste it, so she
dumped the dry ingredients in the pan, mixed it all up and put it back in
the oven. It came out just as good, if not better, than the cake she tasted
at the friend's house. Ever since then, it's been the
"Never-Fail-No-Matter-What Carrot Cake"! Moral of the story? There's
always a way to save the yummies! LOL Oh, except for White Chocolate
Cheesecake when the springform pan has a leak in it and the hot water bath
the pan is in gets sucked into the cake.

Last week I was baking an apple pie. Everyone was eagerly awaiting the pie.
Dumb me started baking it right when people needed to be getting off to
soccer. I was sending the kids over to soccer practice on their bikes as
their father hadn't got home from work yet. Even if he had he has never
wanted to ride his bike with the kids. The kids love riding over on their
bikes. Anyhow, just as I'm getting the kids off to soccer hubby shows up.
I tell DD to leave her water bottle and ball that her father will bring it
over in the car. The kids take off. DH starts ranting about why did DD
leave her stuff for HIM to take. I asked what's the big deal about throwing
it in the car? He says he wanted to ride his bike with the kids. In shock
I said I didn't know you wanted to ride your bike you never have. I had
just sent the kids without him. Now he's mad that they left without him.
So, he's stomping around. The whole time this is all going on I'm trying to
finish up the apple pie. The kids, the husband and all the commotion and
aggravation I pull the pie out of the oven and as I place it on the stove it
does a 180 and lands crust side down on the stove! Apple juice is going
every where. Hubby hears me cuss and comes in to ask if I need help. As
politely as I can I tell him no just to head off to soccer. He insists I
need help. I remind him I don't need help... go to soccer! He insists that
I need help closing the oven door. I tell him NO! GO TO SOCCER! He closes
it anyways and the oven thermometer I had set on the door flips into the
oven. THAT'S why I didn't need help closing the door. He opens the oven
and the timer is broken now. He tries reaching in with a hot mitt to get
the timer and catches my good hot mitt on fire. My timer is broken, my hot
mitt now ruined in the fire and there is apple pie leaking all over the
stove. I grit my teeth and seethe GO TO SOCCER! He quickly retreats and
heads off to soccer. I had just washed down the stove and knowing it was
clean I took a spatula and shoveled the pie into a bowl. Proclaimed it
Apple Smash and we ate it with vanilla ice cream. The kids thought it was
so funny and delicious.

Go ahead and laugh it was a comedy of errors. After hubby left I was pretty
calm about it ... I mean what could one do, but take lemons and make
lemonade.

I was thinking it might make a good recipe swap. Good recipes that ended up
as a disaster or good recipes that after a disaster came back to life with
some creativeness. Have the recipe and the food disaster story to go along
with it.

Comedies of errors always make good scrapbook memories. I have a lot of
those from growing up. It's true! Once people meet my family, they
understand why I'm so nutty! LOL

That would make a good recipe swap. I think we all probably have recipes
that started as one thing, ended in disaster, and still turned out good or
even better.

We had decided to home school Nick as he'd become a real problem at school.
We decided this was the best route to go. It would work perfectly with our
work schedule. We purchased a corrulum when summer started, got the lesson
plans together, were ready for the new school year. Then Alan got moved to
working "days" (M-F 8am- 4:30 pm) not at all what we wanted. That left Nick
home alone on the days I worked, during the week.

One day, I was at work, Alan too and Nick had a science experiment to do.
Something to do with a potato, large 12volt batter and something else.
Anyway, he tried the experiment, it didn't work. Tried it again, it didn't
work. (he left the battery attached to the potato) So he decided to go to
the bathroom. (he was in there a while) Said he heard the smoke detector
going off so he hussled out. All he could see was smoke, then noticed the
fire on the dining room table. He ran to the kitchen, to a pan of water,
threw it at the fire. (keep in mind he's in the 8th grade) Decided that
wouldn't work, picked up the phone, headed out the door to call 9-1-1,
remembered the fire extinguisher. Grabbed it, couldn't make it work. So he
read the directions and put out the fire. (I couldn't believe he had the
presense of mind to read the directions!) He then called Alan to tell him
about the fire. Alan came straight home and they cleaned up the dining
room. (I cleaned up fire extinguisher powder for 3 months! LOL)

The next day I went out and purchased a replacement extinguisher and 2 more.
Alan dug a hole in the back yard and we had fire extinguisher lessons with
the boys. I couldn't believe we hadn't taught them how to use them!
Lessons learned here: #1 No science experiments unless at least one parent
at home. #2 Don't leave a battery and potato hooked up. #3 Teach your kids
how to use a fire extinguisher!

We laugh about it now, but he was really scared. Oh and the table was not
damaged, we just had to replace school books. (but that was nearly as
costly as a new table! LOL)

What an experience that was Kenda! And how ironic is it that a
firefighters son accidentally started a fire? Did you catch any flack
about that from the guys at work?

I think I need to learn how to operate an extinguisher too. I know my
kids dont know. hmm thanks for the reminder!

Suprisingly they all said, gee I need to to teach my kids! They all had a
good haha but that was it. Thank goodness! LOL

Fire extinguishers are cheap at Wal-Mart. You can use the same one to teach
the kids, just put the "pin" back in. It won't lock but it will give them
an idea of what they need to do. Everyone should practice. I know some
fire departments have training sessions for the public. Keep your ears open
for any that might be happening in your area. Or do it at home. (if you
use "live fire", be sure to have the garden hose, turned on, with you so if
it gets away from you you can put it out)

Oh my gosh Kenda, that is too funny! Poor Nick! I've got a fire
extinguisher somewhere... hmmm under the sink I guess. I've never used one
though. When my house burned down in 93 the fire was well beyong an
extinguisher when I got to it.

It does make sense to practive though!

Just remember to read the directions! LOL I can't believe at 13 he had the
presence of mind to read the directions. I think at that age I'd have
freaked! LOL He's a level headed young man......
