If your lead has a loop through which you hold it, the best way would be to
unclip the lead from the dog's collar, then put the end around the post,
through the loop and clip it back on to the caller. That assumes you can
get your dog to stay put, while you do this.
If this is not possible a bowline would make the most secure knot to be
sure your dog is where you left it when you come out of the store :-)

This is a good opportunity to learn how to tie quick relase or
"exploding" knots. A few are used as hitches for horses. They are secure
for their intended purpose but can be quickly untied by pulling on the
running end.
I suppose the running end can be placed out of reach or secured with a
loose half-hitch. If the dog is that determined to escape, then I would be
concerned with any simple knot in rope.

The traditional way to secure against that is to put the running end through
the loop that gets pulled off when the knot is opened. Then pull the loop
fairly small, but not too tight.
