I plan on making a Sierra Nevada Pale Ale (about my fourth of these) and an
Anchor Steam clone (my first).

STOUT.... Just plain ol' oatmeal stout. Not a summer drink you
say? Maybe not, but I like it anyway. I've got 10 gallons of
Alt, and 10 gallons of really insipid amber ale, but I've a craving
for stout.

Belgian White Ale.
It's bubbling along happily. Have to add some Rice Hulls next time, I got a
stuck sparge three times. The mash lumped together like Oatmeal. I guess 1
# of Rolled Oats and 2# of Flaked Wheat might of had something to do with
that :).

Alt,

First time. I made a Kölsch 2 weeks ago and I'm using the
same white labs slurry for the alt. This is the first time
I've tried this and am tickled pink! It started fermenting
like crazy after 4 hours! Never happened before. Just made
it yesterday and it's already down to 1.016 from 1.055!
The origional Köslch attenuated down much
sssllloooowwwweeerrr. Anyway you bet I'll be do'in the
slurry thing again!

I did a Raspberry Ale for a friends party next month. She loves those fruit
beers.
Maybe I'll bring along some ESB to the party also.

FWIW department, I learned to add the rice hulls to the mash right before
you intend to start sparging. Of course, recirculate to clear. The rice
hulls can add some taste to a light beer. I found out the hard way making a
Wit Bier, not bad just a little husky (so to speak)

Racking a Wit.

Toying with the idea of brewing something weird... I feel like giving my
Buckwheat Ale another shot. (I've brewed it once before, and have some
ideas on how I'd like to tweak the recipe the second time around.)

Question on this. Did you rinse the rice hulls prior to using them?
There seems to be some sort of dust in them, which I imagine might be
(at least partly) responsible for the flavor contribution. I put them
in a strainer, and run hot tap water through them until the water runs
clear.

No I didn't, but that's a great idea. Never even thought of it. After you
rinse them do you mash them with the rest of the grain?

I still have some left, maybe it's time for another Wit Bier.

Just a simple grain bill, I used 74% two row, 10% of Munich and 10% wheat.
Mt Hood for 14 IBU bittering, and Hallertau for an additional 5 IBU at 45
min. Just add the Raspberries at the secondary. Real tasty, women really
love it! You can always dap alittle on your neck! :-P

No, I added the rice hulls at the end, just before I transferred to my
lauter tun.

I have an experimental batch. I used amylase powder to mash bananas, rice
and chick peas for about 2 gallons. Added some tetnanger hops in the boil.
I may bottle this week some time. Should be interesting to say the least.

Brewed an Ordinary Bitter (OG 1033) on Sunday. Its gonna be nice and hoppy, man
is the airlock going crazy today! (tues) Its my fourth batch(ext. with special.
grains).

A friend and I will be smoking about 60 pounds of meat,
much of it destined for consumption at our post-competition
banquet[*]. While we're doing that I'm thinking about doing a
quick and dirty (figuratively) brew-- either a barleywine
or a dubbel. Probably the dubbel.
