Anyone have any ideas about the easiest way to open recent proof set lenses
to get the coins out?

I just use a utility knife. Start at the corner and work your way around.
they appear not to be sealed.

Yes, the open very easily once they two halves are slightly separated.
Just need to work the utility knife ever so carefully into the seam and
start the process. Then just use a fingernail around the edges to open
them.
