My wife paddles a Chinook and basically likes it. The stability is
quite good even when I paddle it (6ft. 1", 200 lbs). My wife has had
some trouble with tracking even after using slalom boats for many
years. We finally put a rudder on it and it has been entirely
satisfactory since then. The boat has a fair amount of space even
with me paddling it. As with many plastic boats, it has some tendency
to oilcan. Overall, not a bad boat.

I do find it rather heavy especially during those solo lifts to my roof
rack. Its cadence is not great but stability is good. I have a rudder
but it gets limited use.
If you solo and depend upon paddlefloat rescues you may want to have
some cleats/eyelets added to the aft deck.
Again, my experience is limited, but I feel the Chinook is a fine boat.

Scott; I have a Spectrum and a Skerry. The Spectrum has the same bow
configuration as the Chinnook. That particular bow will slice through
the water, which I prefer. My Skerry rides up over the waves.
This is exciting for about fifteen minutes in three or four foot waves,
but then it gets very tiresome slapping down on the water. Supposedly
the Skerry will keep you dryer, but I haven't found that to me my
experince.
One other point is that Aquaterra people have been very helpful on the
phone and in the three years I have had the Spectrum I have had
absolutely no trouble with it.
