Are there particular manufacturers or models of cruising boats that
have the extra head room I'm looking for?

You don't mention what size or price range you're shopping in, but one
approach to the headroom problem is to go for something like an Olson 30,
Hobie 33, Express 27, or Tartan Ten. No headroom for you or for anyone
else, either! The galley will be set up to work while sitting, and the
bunks are long. Plus you get the snappy performance an handiness of a
light displacement boat.
It's a nuisance when you put your pants on in the morning, but that's only
a few seconds out of the day.

Of course, not the cutting kind, but the opening ones. Even a simple
dodger stringed over open fore hatch makes it reasonable to stand there
in rain and wind.

6'8".....Hmmmm. I used to be 5'20" until old age and gravity took over
if that counts. I've been kicking keels in the SF Bay area for long
time and the bunks and head room range are the first thing I look at.
For a coastal cruiser in the 35-40 foot range I can think of a couple
right off hand. The Cooper 353 and 416, the Fairweather Mariner and
it's sister ship the Westsail 39, and the Catalina 36 isn't too bad (has
a great v-berth...7'+), Actually any of the raised salon or pilot house
sloops will give you stand up head room. The 27' boat I presently own
has 6'4" and the only place you can stand up down below is in the galley
which just happens to be right under the companion way hatch. I like
her a lot. 1000 mile cruising range, full sized aft cabin, and does 55
mph to weather. And she's not for sale. E-mail me if you'd like to know

I am 6'3" and in an Irwin CC 37' saloon and aft stateroom, my hair just
rubs the roof. In the galley, forward stateroom, and showers I have
plenty of headroom. But someone 6'8" won't have enough headroom in that
boat.
