Why do you want to use V-brakes specifially? The reason that the V-brakes
are so popular with the MTB set is the lower lever pressure they give. With
the 105 levers the same low pressure is available with the simpler, cheaper and
LIGHTER canti brakes. I am running 105 aero levers on my touring commuter with
LX cantis and Koolstop pads and I get lovely one finger casual stops in dry and
wet and I can easily lock up the wheels with two fingers from the hoods. This
is a GREAT combo and I recomend it highly.

I bought a touring bike with V-brakes and a MTB steering bar and bar-ends
but I don't like it so I want to chance to a dropbar with race brake-levers.
Because I already have the v-brakes and like their braking-performance I try
to combine and have the best of both. That's the reason.

YMMV of course but I would consider getting a drop bar and using

I can appreciate that you want to use what you already have. V-brakes have a
great reputation for good stopping power but you have to consider that it is not
just one part but rather the whole system of levers and calipers that work
together to give the modulation feel to the brakes. You have to make your own
choices about what you like but as a suggestion why not find someone with an MTB
with LX or XT cantis and offer to trade your V's for his cantis and a little
extra cash from him/her. The extra goes into the 105 lever fund and all are
happy. The references I read in this thread to the extra parts needed to adapt
the V's to the levers sounds clunky and breakable to me. Simpler is almost
always better and in this case I think you would be pleased with how they feel.
By the way my Miyata tourer/commuter is now equiped with STX-RC shifter pods
on the drop bars near the stem. I got them to fit by lightly machining out the
mounting brackets to fit the drop bars. A metal lathe helps but a careful job
with a half round file of about the same curve as the bars will do almost as
nice a job. It's not as tidy as Ergos or STI but much less expensive and works
very nice. (MTB stuff on the back of course)
Anyway you go it is nice to give life back to a good old frame.

I did something similar when putting a Nexus hub on a road bike, but I
mounted the shifter pod at the bar ends. Mounting near the top doesn't seem
like it would have very good ergonomics.
http://www.phred.org/~alex/bikes/trek400 has a picture of the shifter
mounted this way.
There isn't any reason to use MTB stuff in the back... Shimano road shifters
have no problem with Shimano MTB derailleurs and visa-versa. Most of my
bikes are using hybrids of these groups for their drivetrain.
