The guy at my local bike store pronounced it bee-on-key.
To get closer, try to do it in two sylables, byahn'-kee.

The "ch" is a "k" in Italian, and a "gi" or "ge" is an English "j" and
a "gn", is an "ny" as in Campagnolo. This in contrast to a "ce" or "ci"
that is an English "ch" sound. Chianti wine and voce the voice.

Celeste was once a yellowish pale green but when Piaggio bought
Bianchi they came out with a big advertising campaign stating "We'll
never change Celeste"... which was true in a way, because they changed
it the day they took over, making it a turquoise green. There are
enough antique Bianchis around to verify this. Today's Bianchi is not
the original Celeste and it was changed... before they said they
wouldn't change it.

When was that? I remember sometime in about the mid-80s (I think -
Celeste was the same turquoise green that it is today), Bianchi ran an
ad campaign admitting that Celeste was ugly and holding some sort of
contest to determine what their new color would be - but at the end of
the contest they announced that the overwhelming majority wanted them
to keep the old Celeste.
