Examples: My Avocet Cross K's 700/32's are actually 28-29mm's. My
Specialized Armadillo 700/23's are 24-25, My IRC Triathalon Kevlar's
700/25's are actually 22's. And it's a bit of a guessing game as to what
is really going to fit under the brakes. My suggestion is to order one set
each of the next 2-3 larger sizes of the tire's you are currently using,
assuming you like what you are using, and send back whatever is too big or
small, keeping the ones that work.

I squeezed 700x28 Conti's between my Ultegra dual pivot calipers ok.
Although I like to ride 23's on nice roads, a more practical thing would be to
go for the 28's. The quality of your ride will improve dramatically.
Your primary concerns should be whether or not your rim will handle the wider
tire and if the wider tire will fit between your stays/fork.

My Shimano 105SC short-reach brake calipers (which are very similar to the
Ultegra ones) work well with the Avocet 622-28 Fasgrip tires mounted on MA2
rims. Anything wider would require deflating the tires somewhat to remove
the wheel, since these ones just barely slip through with the quick release
undone. Eyeballing it I'd say that 32mm tires would work in there just fine
if you didn't mind deflating the tires to remove them. There is about 1cm
of space between my tire and the inside of the brake calipers.
Another issue might be frame clearance... you should check to see how much
space there is between the tire and the chainstays, seat tube, and brake
bridge. Some bikes have really tight clearances here and can't deal with
wide tires.
