Vs. showed a highlight reel about the 7-11 team, and they showed a
blooper where the mechanic is leaning out the door of the team car,
working on the bike, and all of a sudden the door opens on him, dumping
bike and rider to the ground and nearly wiping out the mechanic, too.

Who was the unlucky rider?

That happened to Davis Phinney, though I'm not sure if it was while he
was with 7-11 or Coors Light.

I'm pretty sure the highlight showed a 7-11 team kit shooting backwards
at light speed after getting doored in a most unexpected fashion.

If it wasn't so disturbing, it would have been hilarious.
