Assuming you are talking about Indycar/Nascar replay files, there is
no way to convert them. The .rpy files only contain position information
about each car, no graphic information.
To produce an .avi or .mov you would have to combine the position
information in the .rpy file with information in the track data files
as the Indycar/Nascar programs do. I don't think anyone outside of
Papyrus knows enough about those files to do that.

The replay files only store the position of the cars on track, along with
any "effects" like smoke or car parts. Converting them to a movie file
format would require an intimate knowledge of the inner workings of the
graphics engine, something I doubt anyone outside of Papyrus could do
without spending a LOT of time on it.
Still pics are easy, just hit the Print Screen key and the program will
dump out a PCX file. The first dump is NASCAR01.PCX, the second is
NASCAR02.PCX, and so forth. They compress rather nicely if you convert them
to GIF format.

David, even more than that, the .RPY files probably consume about 1/500'th
the disk space a matching .AVI file would require. You can get something
like half an hour of racing in ten megs with RPY files, but I'd imagine the
same in an AVI would require most of a CD.
I believe the Machintosh INDY team posted a few replays as movies a while back.
