Can the Honda Odyssey 2000 be converted to an eight-passenger mini-van
by replacing the middle row seats? The 2006 model offers the
8-passenger option.

Isn't it just a 7 passenger option by the addition of a mini cushion in the
middle row.

Yes, the '06 Odyssey EX has nominal seating for eight. It (middle
seat, center row) is a very narrow seat, designed to be folded and
stored under the floor when necessary.

It's too small for a car seat, and too small for a child much past the
age of needing a car seat; my son (4' 3" tall and 80 lbs), can't fit
comfortably in ours.

The LX and Touring don't offer the eighth seat. Check the Honda
website for pictures.

If you got the money; I'm sure you can find someone to do what you want.

Honda, however, will not recommend such modifications to the vehicle.
