The rear end may not have to be changed if it's an 8". All you need to do
is go to the salvage yard and find a Mustang II that had (or has) a V-8.
Get the motor mounts, and tranny cross member. Once you have these parts,
any Winsor will fit with a C-4 Automatic.
Go to my small block site and read about Winsors.

Here is the uneditted email from Phil of Phil's Mustang II spec shop on the
v8. His #/email is at the bottom for specific questions.

You'll also want to upgrade your springs and possibly go to a bigger front
sway bar. You'll also need the driver frame motor mount support.

I'll be doing this swap in the next couple of months, but I have a 74 which
has a smaller engine compartment. I'm still wrestling with the decision
between a 302 and 351. With a 351w, I'd need to either get a fullsize
bellhousing (and the smaller M-II bellhousing is already a tight fit) or
modify the oil pan so it clears the starter as well as the crank. You most
likely have a 7.5 rear end, and depending on how radical you get with your
302, you should upgrade to at least an 8".
