How does one tell the difference between a 340 Mopar cylinder head and any
other cylinder head? Are there any specific serial numbers or markings?

Well, the good 340 heads all had 2.02 intake valves, so they are easy to spot.
All the 340-360 heads had bigger ports than the 318-273 heads, so thats another
clue to look for. Here are some numbers:

68-71 340 heads had casting # 2531894
70 TA heads were # 3418915, but so were 71-72 360's and 71 340's
73-74 340/360 heads had # 3671587

There were also "X" heads, which are said to flow almost as well as the TA
heads. These would be found in the 68-71 era. They have a large easily visible
X cast on the area between the plug holes.

The TA heads are unique because of relocated pushrod holes due to special
mechanical rocker assemblies.

The Engine book from MP has all the details on the heads.
