I know there are some difference between the tubes.
but will it make a big difference in sound/noise-levels etc?

Hello,
since the E188CC is an audio-grade low-noise version of the
E88CC (which was originally designed for VHF applications),
you might get a higher noise level using the E88CC instead
of an E188CC in pre-amplifier stages. Other electrical
parameters are identical.

Just recently I had some discussions with people about E88CC/6922's. They were
looking for low noise and low microphoney. The E188CC never came up, but I
think in general, running the current high, as you do, is good design to reduce
these problems. I'll bet those preamps that don't, are the ones causing these
people to search for low noise/microphony versions of this family of tubes.
Maybe they need to tweak the design a bit?
