I know it means nothing in cardassean, but
it was originally a two part name.

According to Odo himself, when he was brought to the station, the Cardassians
required the Bajoran scientists to label everything clearly in Cardassian, so
they would know what the scientists were working on. Having a strange sense
of humor, they labeled Odo "odoitam," which is Cardassian for "nothing." Soon
after, they made this into a Bajoran sounding name -- Odo Etam.

Actually, it wasn't out of humor; the Bajorans labelled Odo as
"Unidentified Sample" in Bajoran, which was then translated into
Cardassian as "nothing". Just like VCR instructions, some of the meaning
was lost in translation :)

I hear that in Latin, "odo" means "I hate". This may have been some production
thing. I don't know, maybe the show's designers hated the character, or maybe it
was since he's so gruff.

Don't know if there is any correlation, but there was a medieval cleric
named Odo. That's probably the derivation of the name, if not the "Star
Trek" rationale/explaination.

Close, but not quite.
When Odo was brought to the station they labeled him Odo Etal, which
they translated as "unknown sample." However, Odo Etal literally means
"nothing." Later his name was shortened to Odo.

It is a cardassian word. It is a shortening of the name they gave odo.
I believe the name meant unkown. In reality it was the name of
one of the casts stuffed animals.
