Can anybody provide a canon list of captains of ships named Enterprise in
Trek? Also, has Robert April ever been mentioned on anything other than
the animated series?

Other than a few novels April's just been mentioned in the animated
series.

IIRC the name April was mentioned as one of many kicked around with
Paramount before production in _The Making of Star Trek_, but we never
see or hear direct evidence of him onscreen.

In the comic Star Trek: Early Voyages. In the first issue (feb 97)
April hands the Enterprise to Captain Pike.

P: "Captain April, I've read your mission logs-- is there anything
else I should know? I've run some long tours, but never a five-
year mission."

A: "Heh! I've commanded four-- three on the Tiberius, this last one
on the Enterprise. She was so fresh from the Utopia Planitia
yards the paint was still wet. I threw her around the quadrant,
ironed out the glitches, smoothed the round edges-- now she's
all yours."
