Tombstone -Latin Translation

The following Latin excerpt appears in the movie Tombstone(starring Kurt Russell and Val Kilmer) and is spoken in a barroom scene between Johnny Ringo and Doc Holliday:

"In Vino Veritas"

"Age quod agis"

In Pace Requiescat"

Could someone please help me translate these Latin phrases.

"In vino veritas" --`In wine, truth'
"Age quod agis" --`do what you will'
"In pace requiescat" --`rest in peace'

Johnny Ringo also says something about X being a teacher of fools or something,
but I can't quite make out his Latin. And Doc Holliday also says somthing
else, but all I can get out of is are the last two words, "...non ego"--`not I'.
Do you happen to have the rest of the Latin lines? You're a daisy if you do!

Age quod agis = ??? (possibly something like "hunt that which you hunted",
but that makes no sense).

In Pace Requiescat = [May the dead] rest in peace (this is from the Latin
Requiem Mass).

It's been a couple of years since I've taken a Latin course, so my translations
are literal and rusty, i.e. no imagination for the sake of comprehension.

The following are not exactly literal, but they convey the sense, and are
common translations of these phrases

: "In Vino Veritas"

"Drink brings out the truth."

: "Age quod agis"

"Do what you have to do."

: In Pace Requiescat"

"May he rest in peace."
