I doubt that you'll find any true Cat5 with 8-pair because it won't
meet spec and the crosstalk would be horrendous. Why not just use a
switch at the destination end?

That's easy: Belden 8308, about $200 per hundred feet at Newark. Not
the most flexible of cables, but OTOH it comes with a shield.
The problem is if you need Cat5-spec twists, rather than just '8
twisted pairs'.

My guess is that the charastersitic impedance of the pairs could be
important. I 'm pretty sure there's a multipair CAT 5 cable made, but my
source isn't available for a week or so...give me a bump in a week or so
