So I'm a bit surprised when I actually see a film that has decided THIS is the
ending that must be used.
What films have climaxed in pie fights?
They saved the pie fight scene (just as they saved Lon Chaney's
major scene from the Miricle man) but in both cases... thats all that
was saved.

Well, not exactly at the end, but near enough it is Blazing Saddles.
Apparently Kubrick also wanted on for Dr Strangelove, but it never happened.

Dr. Strangelove, original ending
And from what I've heard, THE NUTT HOUSE (co-written by Sam Raimi, who
took a pseudonym) has a very big pie fight at the end.
The Great Race does not end in a pie fight. The famous battle comes some time
prior to the film's ending, which involves the blowing up of the Eiffel Tower.
Speaking of pie fights--could we lock BeanieKing and Reina616 in a bakery and
let 'em settle this once and for all? I'd pay to see it.

I'd hate to spoil 'the crying game', but sometimes I think they are the same
person with two accounts.
I think that pie-fight was originally shot in 1946 for the Three Stooges
short "Half-Wits Holiday" and during the filming the brilliant Curly
Howard suffered a stroke making that his last appearance as a Stooge and
didn't get to appear to the final pie throwing scenes.
I have a webpage devoted to the Dr Strangelove piefight for those
interested.
